I felt much better today! Thanks for all the love yesterday! =)

I started with a great bowl of 8 grain cereal.

I topped it with cinnamon, flax meal, raisins and maple syrup. Yum!

Then I got thinking and made some White Bean and Kale Soup!

You need to make this soup – so simple and so healthy! I had this bowl for lunch then another bowl a few hours later.

I was on a cooking spree and roasted up some parsnips and carrots, too.

Super simple.

I used 2 carrots, 2 parsnips, large chunk of yellow onion, EVOO, dried parsley, dried dill, salt and pepper. I covered a baking sheet for 8 minutes, then uncovered for another 15 minutes in a 400 degree oven. Done.

I finished up a small embroidery project that I am going to send to my Grandma – cute little towels for her kitchen.

I just made the two so far but I am planning on making the entire week for her. She will absolutely love them!

I even went to the gym this afternoon despite my cold. I went not really knowing hoe much I could handle. I ended up running 5.5 miles in 55 minutes. I was amazed and felt awesome! I was literally in shock by how powerful my legs felt.

I snacked on a handful of almonds before putting J to bed then I made myself a glorious salad and toast.

  1. Adorable towels! I think I have some quilt squares that have the embroidery designs on them in sorta the same style – I'll dig them up for you. I'll NEVER get around to them.

  3. I don't know what I love most about this post, the amazing soup, the delicious oatmeal, the awesome roasted veggies, or the darling and adventurous little lad. I'll just go with all of the above.

  4. Heather – parsnips taste a lot like carrots, but sweeter! I don;t recommend you eating them raw, only steamed or baked. I love pairing them with carrots because it helps compliment their own unique flavor. Parsnips are in the same family as carrots =)

  6. What a lovely day and glad you are feeling much better. I love the look of the soup, I'll be trying that as I was looking at a big bag of kale the other day and wondering what I could do with it! Well done on the training, I'm currently refining my own and have just started a journal. I tend to swap activites around but at the moment it's running and weights, I love both at the moment, it's nice to feel active strong.

  7. Leah – H is usually home when I go. Most of the time I go at night after he is asleep but today H is out and I was able to go before he left. I do pay for a daycare charge at the gym but he always screams when I leave him. =( He is not used to me leaving him with strangers as I stay home with him.

  8. Absolutely adorable pics of J. I think they are my fav parts of your posts! 🙂 Just curious, when you go to the gym – does your Hubby look after J or do you bring him to the daycare at the gym? I'm already thinking about what i'll do with my little one come work out time when she's here!
