So I thought it would be fun to do a little vintage “throwback” style blog where I show everything I ate today.
It’s not my goal to have anyone eat exactly like me. I just like sharing my food to hopefully inspire you to eat more veggies or help you get out of a meal funk. And selfishly, I love coming back here to see how I was eating during certain times of my life.
NOTE: Most of my photos are taken in my office since I work remotely and I eat at the comfort of my desk.
I started off my day with coffee, like always. I typically have a few cups black and one with some collagen and a splash of milk.

I’m currently rereading The Comfort Crisis by Michael Easter. It is such a great book that talks about how important it is for humans to get uncomfortable in a world that constantly pushes convenience and comfort.
I almost forgot to take a photo of my smoothie this morning. I blended frozen mixed fruit, chia seeds, a splash of orange juice, water, and a scoop of Truvani vanilla protein.

Lunch was a bowl of homemade lentil soup. I used my own recipe and subbed bison for ground elk. It was high in protein and low in fat. Elk is one of my favorite meats to use in soups.
I also had a side of blue tortilla chips with it.

And a crisp Diet Coke.

Around 3, I was craving an iced coffee, so I had a shot of espresso with some oat milk creamer. I’m trying to limit my caffeine in the afternoon, but this just sounded really good.

My post workout snack was a slice of wheat bread with peanut butter and honey. Layla thought it was for her, ha. Sorry little missy!

Tonight’s workout was lower body focused on mobility and single leg strength. This year, my goal is to stay injury free with my running, so I have been focusing more on strength training for runners. Lots of single leg work and glute activation.
Right now, I am weight lifting six days per week. Monday and Thursday are my leg days. Monday is lighter with more mobility work, and Thursday is my heavier lifting day.
After my workout, I made dinner which was a Cara Cara orange, vegan sausage, and a salad with shredded cabbage, kale, green onion, broccoli sprouts, parsley, cucumber, and a dill dressing.

Nothing fancy, nothing perfect, just a day of eating in my life right now.
If anything, I hope this reminds you that it does not have to be complicated. Simple meals, real food, and showing up consistently will always win.
And I have a feeling future me will love looking back on this one.
