Hello friends!
I hope you are all enjoying your weekend so far! Yesterday was one of those days where I went to bed feeling super productive and full of gratitude.
I typically do not stray too far from my weekday habits and routines on the weekends. I still wake up fairly early and start my morning with reading and some coffee, personal development and Bible time always. But it is really nice not having to start work at 7 AM.
My body naturally woke up at 5AM. I was feeling a little bored around 7:30 and needed to move, so I took little miss Layla girl out for a one mile walk. I live near a lake, so we walked down to the boat launch and listened to the birds for a bit. It was a little chilly at 38 degrees, but we warmed up pretty quickly.


On the walk back, I found this little neighborhood library and picked out a book to take home. I was so excited because I have been wanting to find a free library to grab some new books and also donate to. I will definitely be bringing some books back soon!

I picked The Paradise Problem by Christina Lauren and yes, I totally chose it because of the cover. It was just too pretty not to take. When I got home, I looked it up on Good Reads and saw that it has solid reviews and over 4 stars, so that is a win!

After our walk, I made some breakfast. Just a simple tofu scramble with toast and butter and a side of blackberry jam. I seasoned the tofu with salt, pepper, and turmeric and cooked it in a little olive oil.
Quick tip: I always freeze my tofu before cooking it because it helps firm it up and gives it more of a bouncy texture, almost like meat. If you do not like the texture of fresh tofu, try freezing it first.

A few hours later, I finally went on my run. Running still intimidates me, which is kind of crazy to say considering I started running when my son was just a baby, so it has been almost 18 years now.
I am easing back into it after not running much last year. Right now I am focused on strength training, building muscle, and slowly increasing my miles without getting injured. I have some distance goals I want to hit this year, so I am trying to find that balance between slowing down and building back up.
My goal was 4 miles yesterday, but I ended up doing 5. I took a few walking breaks and really focused on how I felt instead of my pace. It was such a beautiful day too. I found a new trail and I think this might be my new go to for longer runs. So peaceful and the views were amazing!



I am currently running in the Brooks Trace line which are a neutral running shoe.

5 miles at an 11:30 pace. I will take it. Those first 3 miles were not fun though. I wish more people understood that you cannot judge a run by the first 3 miles because those are always the hardest. After that, your body starts to catch up, your breathing evens out, and you finally settle into it.

After my run, I was craving something fresh and light, so I made a veggie sandwich with an Opal apple. I have not had one in a long time, so I grabbed a few on my last grocery trip. The sandwich had hummus, broccoli sprouts, tomato, and cucumber. It was exactly what I needed.

Along with some EAA’s and electrolytes.

Before my run, I also made some date balls and had a couple for dessert. The recipe is super simple. Just add soaked dates, a handful of walnuts and cashews, and about half a cup of unsweetened coconut flakes into a food processor and blend. Roll them into balls and pop them into the freezer to set.
I topped a few with Lily’s chocolate and added a little extra coconut on top. So easy and so good!

I still needed to get a lift in, so I headed to the gym for a shoulder and chest workout. That was the last thing I wanted to do, but my main goal right now is building muscle, so I got it done.
After my workout, I came straight home, made dinner, and called it a night.
A very productive and active day, that is for sure. Now that the weather is getting nicer, I really want to take advantage of being outside while it is still cool and not full summer heat.
