The day after…

Hi friends!

Just a quick post to show what I ate today! 🙂

I was pretty hungry this morning and my tummy was growling at me by 8:30. That is pretty early for me as I normally have my first meal around 10. But last night was leg night and I am ALWAYS more hungry the day after.

I generally stay away from meal / protein bars but I do have a small stash in my desk in case of emergencies. And I didn’t feel like eating my “real” breakfast so early in the day as I knew I was not going to be able to grab lunch until 2PM today.

So I enjoyed this Zone bar with my coffee this morning while checking emails.

Around 10:30 I enjoyed my actual breakfast that I brought to the office with me.

3 egg whites scrambled with a little coconut oil and spinach and fresh baby tomatoes. I make my eggs in the morning before work and then keep them in the fridge until I am ready to eat them. I actually prefer my eggs cold vs. hot!

I also had some oatmeal with chia seeds, cinnamon, stevia and natural peanut butter.

I was going to take my lunch at 2 after my meetings but I was pretty satisfied still from my two breakfasts; so I opted to stay at work and eat when I got home around 4:30. I will say by the time I got home I was pretty hungry and the ONLY thing that sounded good was a big salad!

This salad had a ton of chopped baby spinach, green cabbage, red onion, shredded carrots, a few kalamata olives, a sprinkle of fresh parm and ceasar dressing. I also had a side of flatbread crisps.

And to curb my sweet tooth, I had 3 dates.

Little man had a super-short, but super-cute recorder concert at his school – he had so much fun! And it was so fun to watch him and all his friends play instruments!

Tonight’s workout:

40 minutes speed-work on the treadmill + back/biceps

Pumpkin Patch Trip 2015

Hi friends!

How has your October been? This past week my mom stayed with us for my birthday and for Jordan’s Birthday – it was so much fun! We went shopping, took road trips, drank mimosas and ate yummy food! We also took out annual trip to the pumpkin patch!

We didn’t stay too long as it was REALLY cold out! We even saw snow flurries! Brrrr!!! But we had a lot of fun! My mom, Jordan and I always go to the pumpkin patch together so this was a really special day us. ❤

My most recent breakup + toothless!

Look who lost his first tooth!

My baby boy is not a baby anymore!

I picked him up from school today and the teachers had put it in a baggie so it would not get lost. He was sooooo excited when he saw me! And I was too!

After I picked him him from school, I went and picked up a couple of pints of Ben and Jerry’s ice cream. I was reading Carrots n Cake today and I had been craving it ever since! I figured What the heck! I might as well celebrate with him. 😉

I haven’t had ice cream in a looooong time! And it was sooooo good! Vanilla ice cream, caramel and chocolate covered waffle cone pieces. Yup, a winner!

Tonight he was really excited to put his little tooth under his pillow for the tooth fairy. I can’t believe he is old enough for the tooth fairy!

If you have been following me on my social media channels, you have noticed I gave up coffee this past weekend. I am proud to say that I have been coffee free for 5 days now!

I had been sick the week prior with a flu bug and ever since then I couldn’t really stand the taste of coffee. Thursday night I ended up going to the ER due to really sharp pains in my left side and little did I know I had a horrible UTI. It was traveling up into my kidney which explains the pain. I was told to drink at least 2 liters of water per day to help flush out the infection.

I knew this was a sign from my body to STOP drinking coffee.

And while the two illnesses were not connected to my coffee consumption, I was drinking a lot of it. 3 cups in the morning, often times a cup in the afternoon and sometimes a cup in the early evening. I would call it addiction. And I was having very bad headaches and felt very sluggish and acidic.

So I woke up Saturday morning with the intention I was going to severely cut coffee out of my life. And it has been fantastic ever since!

Here is a daily recap:

  • Day 1 (Saturday) – Headache in the morning. Drank several cups of water and did end up making myself a cup of coffee in the afternoon but only drank a few sips.
  • Day 2 (Sunday) – Woke up and drank a liter of water right away. No coffee and no tea and surprisingly no headache! I probably drank close to a gallon of water.
  • Day 3 (Monday) – I was a little cornered that I was going to feel crappy at the office so I brought a few bags of green tea. It was really nice drinking green tea in the morning! I also drank an entire gallon of water. No headache and felt amazing!
  • Day 4 (Tuesday)  – Green tea in the morning and a gallon of water throughout the day. Still felt really amazing!
  • Day 5 (Wednesday) – Today was the best day yet! I only drank 1 cup of green tea this morning and a gallon of water and my energy levels were incredibly high! I am so please that I am feeling this amazing! I wish I would have cut coffee a long time ago!

Tips:

I prep my water at night. I have two bottles that are 1.5 gallons each and I fill my mason jar with 4 cups of water. I like to drink my water room temperature so having it out during the day helps my water intake! I simply fill my mason jar up as I drink it.

Green tea is my BFF right now! But I suggest buying organic!

Most importantly – Make sure you really want to cut coffee! You cant expect to follow through with something if you are not fully committed.

Letters to Santa

Yesterday, Jordan and I sat down to write a letter to Santa.

He printed the Dear Santa and his name at the bottom, and I tried my best to write down what he would like for Christmas (in my best little kid printing). He was so overjoyed! The sparkle in his eyes was so priceless. I kept looking at him in amazement as he was explaining what he would like to Christmas and he voice kept getting higher and higher as he became more and more excited.

As you can tell, I have a little artist on my hands: colored pencils, coloring pad, skeleton book, storybooks and all sorts of toys! He then added stickers to his perfect letter and we sealed it in an envelope.

letterHe put it in the mailbox, flipped the flag up and started jumping up and down with glee! We wished his letter safe travels to the North Pole!

I hope to continue this tradition for a few more years until he learns that Santa isn’t real. Until then, we will write a letter to Santa, seal it in an envelope and send them off!

(Of course I went and picked the letter from the mailbox that night. I am saving them until I feel it would be fun to read them with him again… maybe 20? The letters will stay sealed until that day comes… how fun that day will be!)

A cozy Sunday

Hi friends! Happy Sunday!

I love Sunday! It’s my day to cozy up inside and relax. Usually my Sundays include meal prepping, soup making, cleaning, playing games with Jordan, blogging and catching up on my blog reading, business (writing E-Books, editing photos, talking to clients) and just doing what my heart tells me! I also loving waking up early and pounding out some journal pages and squats! 😉 Oh, and FOOTBALL! I love watching football! I have blogged about our Sunday Football watching before… we have been doing Fantasy Football for about 7 years now, too! It’s so much fun!

Oh, and it’s daylight savings time today! I remember hating daylight savings time when Jordan was a baby because of course it messed his schedule up for a good week or so. Now it’s not so bad.

This morning I was taking care of two sick boys – hubs and bubs! Hubs woke up with a sore throat and pounding head, and Jordan has been dealing with an ear infection this week. Moms = Doctors! ❤

I also prepped a batch of Crockpot chili this morning – the house is smelling soooo good right now!

Chili is one of my favorite things to make and eat! Most of the time I will make a vegan chili but today I am making it with ground turkey. And instead of jalapeño peppers I used a poblano pepper – I think it will taste pretty darn amazing!

After I placed everything in the crock pot, I made myself a yogurt bowl! Man, I love yogurt bowls!

I used coconut yogurt, a sprinkle of trail mix and granola and a cut up organic apple. I haven’t had a yogurt bowl in soooo long… I really missed them!

Jordan and I also wrote out his Thank You cards from his Birthday. Teaching children to say Thank You is so important!

I also love seeing him write his words! Each day I am so amazed by Jordan! I still can’t believe how fast he is growing!

Here are a few pictures from Halloween! He was a Ghost this year! I bought white facepaint but he didn’t want it one – he’s funny like that! He hates to be dirty or have anything on him! lol

We went out for only an hour and a half and he ended up scoring a lot of treats! Of course when we got home he had to line them up on the couch… did you do this when you were younger? I know I did!

Here is my take on Halloween and candy: I know candy is not good for kids. But it’s one of those childhood memories that I want him to have! Since he does not eat candy or sweets on a regular basis, he hasn’t really ask me to eat any of his candy. He still has the entire bucket full and he likes to play with it and count it! lol I have been throwing away his candy when he isn’t looking. But if he wants one piece here or there I will allow him to have one. We live in an imperfect world! And as long there is moderation and teaching involved, kids should be able to be kids!

Pumpkin Patch 2013

Hey clean eaters! I hope everyone had a wonderful weekend! My mom, Jordan and I went to our favorite pumpkin patch on Saturday. We had a blast! Tractor rides, hot coffee, pumpkins, and the wonderful sites and smells of a perfect autumn day! I took A TON of pictures – I just love the colors and textures of everything fall harvest!

Monday Motivation

 Happy Monday!

You might not know this but I am starting to LOVE Monday again!

Monday’s bring opportunity. Opportunity to start things you have been putting off or opportunity to look at something that didn’t work and try it again. Monday’s are the new Friday, in my opinion!

This weekend I mentioned some changes were happening and I will slowly tell you about them. The fist major change is that I am now staying home, blogging, developing recipes, working with companies and being a brand ambassador, and of course being more available for my family. I am planning on creating some brand new content, eating programs and implementing some fresh, positive ideas! I am also working on my health and wellness coaching and starting to build my client base. Positive changes! I am very happy and optimistic about the future and what is waiting for me! I will share more as it starts to unfold!

Today was the start of Jordan’s new Pre-K, too! He was in a pre-school setting for the past 6 months and now I started him in a part time Pre-K environment to help him get ready for Kindergarten! And he is now only going part time, 3 days a week, instead of all 5. This way he still gets ample time with Mommy and Daddy and wont feel so overwhelmed.

It’s going to be another BEAUTIFUL day in Seattle, today! But my plans include cleaning the house from top to bottom! Including getting rid of any unnecessary pantry and fridge items. I am starting my detox today – no gluten, no sugar, no soy, no dairy – heavy raw fruits and vegetables, beans, grains, nuts, organic eggs and fish/protein as needed. I am developing the program today/tonight and will be posting it soon!

And look what we ran into! Another little fact is that we love watching Deadliest Catch. The boats in parked in Seattle right now and we happened to notice this bad boy, The Wizard! Keith and his crew are our favorite! I even tweeted Captain Keith this picture and he loved it! 🙂
