It was definitely a Monday for me today. I was in a funk all. day. long. I’m not sure if it was due to my head cold or if I was just in a funk but I was not feeling like myself today.
The only times I felt good were when I was eating =)
J and I shared a green monster this morning. It had almond milk, spinach, half of a banana, a few pieces of frozen fruit and flax meal.
J loves them!
A few hours later I had a small bowl of granola with almond milk, flax seeds and raisins.
I was feeling pretty crappy around lunch. The sun was shining at our little breakfast table so I made a healthy lunch and recharged with the sunlight.
This salad had pretty much everything in it! Dressed with EVOO and hummus. With Mary Gone Crackers on the side.
I also vegged and started to read Adventure DIvas. I have had this book forever and I really need to start reading it.
This made me smile:
Dessert was a yummy bowl of kiwi and cantaloupe.
Mentally I started to feel better but physically I was drained. All I wanted to do was sleep and I haven’t been able to breath all day. I really hope to feel better soon. =(
I did snack on some trail mix here and there during the afternoon with J and dinner was a bowl of Mexican salad.
Romaine, olives, black beans, rice, avocado, red onion, Mexican seasoning and tortilla chips. Of course dessert was coconut ice cream – I love this stuff!

Jen – thanks for the questions! I will be posting an entire post on this but I wanted to answer you here as well. I do give J organic whole milk, along with almond milk. I don't drink dairy and when I make my own shakes I use almond milk. Almond milk is fine for toddlers but I do try not to give him soy. More on this to come!
Feel better! J actually looks more like a baby than a big kid in that picture-it doesn't happen often. I cherish those pictures of Lu. They grow up too fast!

Cows milk is great for baby cows (which is what cows milk it for) but as humans and cows differ the nutritional profile is actually not that great for humans (adult or baby). In fact the Food Standard Agency in the UK state "Cows' milk is not suitable as a drink until a baby is a year old because it contains too much salt and protein, and not enough iron and other nutrients, to meet your baby's needs".On another note the Mexican salad looks awesome and I Tasha and I hope you are feeling better today.

I hope you start to feel better soon too!I think it's great that J loves green smoothies. My nephew has tried them before and really likes them too, as long as they are smooth. I plan on making them for my kids as early as I can.. so many nutrients!

I noticed your son drinks smoothies incorporating almond milk. I've read some literature regarding how important cow's milk is to developing toddlers (I have a 5 month old and 19 month old). However, my daughter doesn't like the taste, regardless of what syrup I put in it or what I mix it with to make smoothies. I've never personally tried almond milk. Is that the only kind of milk your son drinks? Could you maybe explain the benefits of it as a replacement for cow's milk? I know many healthy and clean eating bloggers omit cow's milk, but I never really knew why. Thanks for any info.Hope you are feeling better 🙂
