Nothing starts off the day like a great breakfast…
Tofu, toast and kale. Yes, kale.
When you have a craving you just have to feed it! I bought a bunch of purple kale at the store last night and my mouth had been watering all evening. I actually love eating my greens for breakfast. And thanks to the Kind Diet, it is perfectly acceptable!
- 3 leaves of kale, washed and torn off of stem
- 1/3 cup of sliced onion
- teaspoon of EVOO
- 2 tablespoons pine nuts
- 1 tablespoon raisins
Sauté onion in oil until soft. Add nuts and raisins and let cook for a few minutes. Add washed kale, a splash of water and cover. Let steam for 8-10 minutes.
My tofu scramble was delicious, too.
I sautéed some onion in EVOO, then chopped 1/3 of a block of firm tofu. Added a pinch of turmeric, some salt and pepper, red pepper flakes and hot sauce. Simple!
Of course I had to make my boys some breakfast, too. They each ate a chocolate chip pancake.
I also want to share some of yesterday’s eats with you, too.
I made a veggie juice yesterday morning that was divine!
- 2 tomatoes
- 5 carrots
- 3 stalks of celery
- large handful of cilantro
- 1/2 red or yellow bell pepper
A satisfying salad for lunch held me over the entire day!
Baby spinach, artichoke hearts, black olives, red bell pepper, sun flower seeds, red onion, avocado, salt and pepper. What made this salad was the dressing. We had a dinner party a few nights back and our friends brought this AMAZING sauce/dip/dressing! For the life of me I cannot remember the name nor do I remember what was in it. All I know is that it’s vegan and addicting!
I noshed on a Larabar late afternoon. Mmmmmm ginger.

Plus the new widget allows me to reply to each comment which works great for answering questions or leaving comments!
