I often find myself creating dishes around simple ideas, and the results are beautiful and scrumptious. Take toast, for example. A simple canvas that has endless possibilities. I am a huge fan of toast and avocado with some sea salt and pepper. However, when I purchased grape tomatoes and a huge bag of fresh basil an idea sparked.
One of my favorite flavor combinations is basil, tomato and salt. I took this obsession and added even more obsessions to that: creamy avocado and spicy red onion. All atop a toasted piece of sprouted toast. Magic.
- 1 piece sprouted toast
- 1/4 – 1/2 avocado
- 4 – 5 large basil leaves (enough to cover the piece of bread)
- 8 grape tomatoes, sliced in half
- small handful of red onion, chopped small
- salt and pepper to taste
- small drizzle of extra virgin olive oil
Layer ingredients on the toast. Eat and enjoy. Simple.
You could use the same recipe and use French baguette rounds for appetizers.
