Don’t be late!

It is a beautiful day in Seattle! A little windy but sunny! I do admit I love rainy, cloudy days but I always feel more upbeat and positive on sunny days.

I am off to the doctor this afternoon… a little nervous but more relieved that "hopefully” I will get some answers about my back.

I had a simple bowl of cereal for breakfast.

Flax cereal, almond milk and organic raisins. I love cereal.

I am eating lunch as I type – mulit tasking =)

A raw salad with romain hearts, avocado, red bell pepper, cilantro, white beans and sun flower seeds. I also have a small side of chips and salsa. And yes, those are chop sticks. I love eating with chopsticks!

I wanted to share last nights dinner, too. I baked some asparagus, a Portobello mushroom and boiled some garlic noodles. I made an asian marinade for my mushroom but I baked it far too long. It came out very tough but pretty tasty. The marinade needs some work so I will be sure to attempt this again and post a recipe when I master it.

    Good luck with your dr's appointment. I like the idea of adding sunflower seeds for crunch to a salad, I need to pick some up!

    I love eating with chopsticks! Definitely my biggest triumph was corn… ON THE COB… I was in Asia, hahahaha.
