I wanted pancakes this morning so I whipped up a batch of vegan whole wheat cakes to satisfy my craving.
And boy were they good!
The batter was wonderful – great texture! But I admit I love a good and thick pancake. My husband loves thin ones but not me; the thicker, cakeyer (is that even a word?), the better!

It held me over for the entire morning and early afternoon.
Lunch was a veggie love fest!
Roasted carrots and parsnips from the other day…
White bean and kale soup… ( I only have one more serving of this soup left – I’m sad )
And a piece of sprouted toast with Earth Balance. It was such a great lunch!
I tend to eat more veggies than fruit, I’ve noticed. I like to eat fruit for breakfast and maybe as something sweet after a meal or as a snack, but I load up on veggies for my meal.
Are you a veggie or fruit lover?
Yum! I love both fruit and veggies but find I often pick fruit first because it's easier/faster to prepare.

Those pancakes look SO good! I haven't had them in so long. I think I am going to make them tomorrow morning. Perfect start to a Saturday me thinks! 🙂
I am totally a fruity! I wish I loved veggies more but I have to force myself to eat them or hide them so I can't taste them like in the green monsters!
