Pancake heaven

I wanted pancakes this morning so I whipped up a batch of vegan whole wheat cakes to satisfy my craving.


And boy were they good!

The batter was wonderful – great texture! But I admit I love a good and thick pancake. My husband loves thin ones but not me; the thicker, cakeyer (is that even a word?), the better!

It held me over for the entire morning and early afternoon.

Lunch was a veggie love fest!


Roasted carrots and parsnips from the other day…


White bean and kale soup… ( I only have one more serving of this soup left – I’m sad )


And a piece of sprouted toast with Earth Balance. It was such a great lunch!

I tend to eat more veggies than fruit, I’ve noticed. I like to eat fruit for breakfast and maybe as something sweet after a meal or as a snack, but I load up on veggies for my meal.

  1. I'm such a pancake fanatic! Your look amazing! I don't think I could pick one in the fruits vs veggies debate! I eat mass quantities of both every day
