Green Vegetable Egg White Scramble

  • 3 egg whites
  • 1 cup loose leaf spinach
  • 1/4 cup chopped broccoli
  • a few tablespoons yellow onion, chopped
  • 1/2 cup chopped mushrooms
  • salt and pepper
  • teaspoon coconut oil

In a medium sauté pan, heat coconut oil on medium heat. Add onion, salt and pepper. Let cook for a minute. Add broccoli and mushrooms. Let cook for a few minutes. Add spinach leafs and let cook until spinach is slightly wilted. Add egg whites. Stir/scramble until eggs are done, about 5 minutes.

Serve with fresh vegetables and avocado. Top with hot sauce for extra heat.
