I never in my wildest dreams would I have ever thought I would make this statement: “I love kale”. But I do. I love it. No – I ADORE it! It has a subtle flavor that is extremely versatile, and I am addicted to the texture. Not too soft with a nice crunchy bite. Mmmmm.
Thanks to OSG and her dinner the other night I have been dealing with my cravings for kale and mushrooms. After a 3 mile run today, I hurried home to make the best lunch ever! Well, at least for this week, 😉
This meal was very simple to make, yet it looks so elegant.
I put a few tablespoons of EVOO in a skillet, added 1/4 cup of yellow onion and 5, quartered button mushrooms. I seasoned with chili powder, garlic powder, salt and pepper. After they sautéed for a few minutes, I added my rinsed kale with a few tablespoons of water, a few tablespoons of fresh lemon juice and a teaspoon of minced fresh garlic. A little more salt and pepper, put the lid on and let steam for a good 8 minutes.
I already had pre-cooked brown rice in the fridge. I heated about 3/4 of a cup with some salt and pepper. Top the rice with the kale and mushrooms and enjoy!
For dessert: crunchy, green grapes.
Of course J had to help me eat them, as well. =)
