Wow, what a week!
I had been helping my old employer with some marketing projects this week; hence the lack of posting. It was wonderful to get out of the house, wear something other than yoga pants and talk to adults again. At times I do miss the daily grind, especially when I was surrounded by amazing peers and colleagues.
Next week I am back to my old schedule – I really missed giving my boy hugs and kisses in the morning!
I was still taking pictures of my food for all of you. Here is a sample of what I was noshing on:
Whole Foods salad bar with a small serving of pasta and greens. It got a little shook up on the way back to the office.
Red Curry with brown rice.
A Mexican salad – baby spinach, vegan refried beans, black olives, onion, avocado, salsa and lots of black pepper!
Soy yogurt with granola and strawberries.
Tonight I made myself a mini vegan pizza.
I used a Rosemary Clean Cravings pizza crust, then topped it with pasta sauce, basil leaves, onion, sun dried tomatoes, artichoke hearts, black olives and pizza seasoning.
I love pizza without cheese and loaded with veggies! I never thought I would like pizza without cheese but I think I like it even more! No grease, no guilt and all flavor.
So what does everyone have planned for the weekend? We have a few plans but nothing major. What ever you have going, be safe and have fun!

I love strawberries in yogurt. I actually found Greek Yogurt for the first time ever this weekend…and just had to try it after the hype! It's good once you add fruit…and maple syrup 😉 to it…but it's uber-duber expensive for a small tub – that I go through in only a couple of days, so alas it won't be a regular feature :(.Have a great day !
