Nom Nom, Yum Yum

Thursday, already?! It seems as though this week has flown by!

Look how beautiful the sky was this morning:

I haven’t see sky this color in a long time! I wonder why it gets that pinkish color at times…

Breakfast was just as pretty!


Pancake mix with flaxmeal mixed in, topped with strawberries, pecans and pure maple syrup. Also an organic gala apple and almond butter. It was a wonderful breakfast!


Then I found a recipe that Angela posted and I had all of the ingredients! So of course I put on my apron and started chopping and mixing! My very first attempt and home made veggie burgers! =)


I even used my new recipe holder that I received from my dear friend, Sophie! It worked great!

I used the main recipe but added a few other ingredients. You can see my recipe for Spelt Bean Burgers here – but be forewarned: YOU WILL LOVE THEM!

Here is what lunch looked like:


A bean burger on an Arnold bun, hummus, melted mozz cheese, hot sauce, avocado and sprouts. Along with baby bok choy and Terra chips. It was such a wonderful lunch!

And a piece of dark chocolate for dessert.

  1. Beautiful pics! This weekend, I've got a long run planned with the President's Marathon Challenge Team. Hoping to do some yoga after that…would be sooo nice! Other than that, not much…just relaxing! :)Have a great weekend!

  3. Nom nom is right! everything looks fab and I have noticed the beautiful sunrise too. I drive to work as the sun is rising and the last few days they have been FABULOUSI always take a deep breath.I need a recipe holder! way cool!
