How is everyone’s weekend going?
I started the day with my daily cup of decaf coffee and a lovely GM.
- cup of almond milk
- 3 handfuls of spinach
- 1 banana
- 2 tablespoons flax meal
- 1 tablespoon almond butter
- a few handfuls of frozen fruit – grapes, strawberries and peaches
I forgot how much I love the flavor of adding almond butter to my GM’s. A little extra punch of healthy fat to keep me full.
Lunch was mouthwatering, to say the least.
I made another batch of Cashew Spread with oregano, basil and red pepper flakes. I seriously cannot get enough of this spread! The spices I used made the spread taste very “pizza” like.
I spread a thin coating of Earth Balance on two pieces of sprouted bread and grilled them in a pan. On each slice of warm bread I spread the Cashew Spread, added sun dried tomatoes, artichoke hearts, red bell pepper, red onion and avocado. With one bite I knew it needed a side of marinara sauce for dipping. Pizza in a sandwich? Oh Yea!
I also went on a nice run this afternoon – 4 miles. Funny thing is I don’t feel as powerful or confident about my running as I did last week. Could be stress, weather, food… I find myself getting discouraged that I am not improving more quickly. =(
Dinner was re-heated Chinese take-out from a few nights ago.
Kung Pow Tofu, extra spicy, on a bed of brown rice.
I have a weakness for take out once every few months. Not the cleanest of foods but once in a while I have to splurge!

I promised I would post my embroidered towels once they were finished – I think they turned out great!
I also dabbled in some pillow making. This is one that I simply appliquéd on fabric scraps, then embroidered around the edges to give it a “finished” look.
