I had one bunch of rainbow chard in my fridge that needed to be eaten, as well as the rest of my Lentil Loaf.
Hmmm…. lunch, anyone?
The chard was amazing! I usually eat kale but chard has such a green and earthy taste to it, more so than kale.
For the entire bunch of chard I sautéed a teaspoon of minced garlic and 3/4 cup yellow onion in one teaspoon of EVOO with a pinch of sea salt. I waited until it was slightly brown then added a teaspoon of brown sugar to caramelize. I also added some pine nuts to the mix.
I washed and chopped the chard into large, bite size pieces, added it all to the pan and covered. I let it wilt down for about 8 minutes. I always forget that greens wilt down so much – one bunch of chard makes 2-3 servings.
This was the last of my lentil loaf. If you are on the fence about making it, DO IT! I promise you will not be disappointed!

He did pretty well for eating today, but then again I made sure to give him foods that I know he would eat.
And thanks to EVERYONE who left comments on today’s post. I know it’s a phase… but it is so hard! I care so much about his health and I obviously worry a little too much. But then I think about when he turns 15 and probably will never STOP eating! =) What comes around goes around.

Mmmm, I have not had chard in awhile and need to give this a try. I'm tempted on the lentil loaf, it does look amazing.

I usually use chard in my smoothies, but that looks so yummy I will have to try cooking some.Your little one is a real cutie!and as a mom of four, I can tell you, they are NEVER full when they become teenagers 😉
I'm a big fan of swiss chard, but I've never sauteed it. I'll have to pick some up at the store because that looks really good.Aw, J is so adorable!
