I made the best tofu scramble this morning for breakfast:
Turmeric. Oh how I love thee.
I used extra fir tofu this time and a little lighter on the turmeric and it turned out amazing. The tofu had wonderful texture and not watery one bit. I also sautéed the onions and mushrooms in a bit of sesame and olive oil for a little flavor; along with red pepper flakes, salt and pepper. I then topped it with fresh cilantro, avocado and hot sauce.
With a spouted bagel all toasted up with Earth Balance.
