I made the best tofu scramble this morning for breakfast:
Turmeric. Oh how I love thee.
I used extra fir tofu this time and a little lighter on the turmeric and it turned out amazing. The tofu had wonderful texture and not watery one bit. I also sautéed the onions and mushrooms in a bit of sesame and olive oil for a little flavor; along with red pepper flakes, salt and pepper. I then topped it with fresh cilantro, avocado and hot sauce.
With a spouted bagel all toasted up with Earth Balance.
I gotta say this entire breakfast looks fantastic. I keep saying I'm going to try a tofu scramble but am such a chicken. This weekend for sure!

The scramble looks great, I've become a huge turmeric fan too, so many raw recipes use it.
