Chocolate Chip Cookies

  • 1 cup softened butter (2 sticks)
  • 3/4 cup white and brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 teaspoon baking soda
  • a pinch of salt
  • 2 – 2 1/4 cups flour

Preheat oven to 375 degrees fahrenheit. Drop one inch spoonfuls of batter on lightly greased cookie sheets. (I use Pam and wipe the excess off) Bake cookies for 10-12 minutes. Cool on wire rack and enjoy!

I know everyone has their own favorite chocolate chip recipe but I thought I would share mine. I can make these in my sleep – this is Marc’s favorite cookie and I bake them once every few weeks. While they are not very “clean” or healthy, I would rather have him munch on these if he has a sweet tooth then a bag of processed sweets from the store. So I guess in a way they are “clean”! I have experimented with using apple sauce, less sugar but I could never get it just right. I do, however, use organic and/or local ingredients. I would love to find a great vegan recipe, though. Any ideas?
