Grub + Training Plan!

Hi Friends! Happy Wednesday!

I did not forget about blogging! I am just trying to find my groove after months and months of not blogging šŸ˜‰

Between working full time, taking care of little man, training/running/gym, and everyday life things, I am trying to see when I can actually sit down and whip out some posts!

I will say that if you want to see what I am eating on a more regular basis, head on over to my Instagram – this is my preferred platform for posting pictures and life happenings. I wish blogging was as easy as Instagram! HA!

Here are a few things that I have been grubbing on lately! And you may see a trend with these eats… CARBS! I am running more these days and trying to fuel myself with more healthy carbs.

Breakfast is my most favorite meal of the day! I seem to always take pictures of my breakfast šŸ˜‰

3 egg whites with sauteed onion and red bell pepper, 2 slices of bread toasted and fresh cherry tomatoes.

Overnight oats with apple and peanut butter.
For the overnight oats I added 1/2 cup whole oats to one cup of unsweetened almond milk, a few table spoons of chia seeds, cinnamon and stevia. Place in fridge and I topped it with a chopped apple and a tablespoon of peanut butter in the morning before I left for work.

This may look or sound a bit unusual but it is one of my favorite combos!
I chop a few carrots, some stalks of celery, 3-4 medjool dates and add a dollop of nut butter. Easy and so delish! I typically add an apple but we were out so I added more carrots.

I had a mid-day dentist appointment so on my way back to the office I stopped at a local natural food store and picked up some quick treats. This made a great lunch! Multi-grain crackers, hummus, a chocolate Rebbl protein drink and a coconut macaroon bar.

This was one of my easy lunches – greek yogurt, stevia, granola, homemade oatmeal cookies and a few dates (I was going to eat these before an after work run but I ended up not being hungry)

And looking back at all of my food pictures, this was the only dinner picture I took! Dinner is a little hit and miss with me – usually I am snacking on a few things here or there or eating as I am cooking dinner for Jordan. I have gotten out of the habit of actually sitting down for a meal. I should probably get better at this! But for now this is how life is.
This bowl had a modge-podge of yummy things in it! Whole wheat pasta, chickpeas, leftover turkey burger patty, baby spinach, fresh parmesan, and a a mix of different herbs and spices. I remember being so RUNGRY (hungry after a run HA!) that as soon as I took this picture, this bowl of food was gone in minutes. And it was a BIG bowl!

And speaking of running, I have finally created a training plan for a marathon I am running in August!

To say I’m a little excited is an understatement. #nofear #allgood
The last time I was training for a marathon was over 5 years ago. I sustained a lower back injury that put me on bed rest for weeks. I was at a complete hault with no recovery time in sight. Once healed, I was so scared to run any distance over 4 miles that I completely took races out of my future.
Until this year.
The difference?
Weight lifting, conditioning, proper rest, a plan and patience.
And ENJOYMENT!
I have always enjoyed it, but I would be so critical of my time and how I felt during and after each run. Now I embrace my speed (or lack of), and embrace the flow of each run.
I am so excited for this year, this challenge and to see where my love of running will take me!

I am also encouraging Jordan to run with me on the weekends.

Happy 4th!

Happy Fourth of July! I hope each and everyone of you had a safe weekend!

I was busy thrift store shopping, running, relaxing and sewing! Oh and eating! i couldn’t forget about eating. =)

I finally purchased a new pair of running shoes – feet, I apologize for the abuse the past few months. But I am sure you will love your new home!

Half way

Wednesday is here and gone. Only two more days until the weekend!

I had a great run tonight. 4.7 miles in 41 minutes.
Dear Creepy Guy – Thank you for complimenting me on my physique… kind of. No, not really, actually.
I was running and I ran past this older guy who said" ā€œIt’s working!ā€ā€¦ I shyly smiled and ran faster to get away from him. It actually really freaked me out and I ran a different way home. Some people should just keep there mouth shut.

Today’s eats:
Breakfast – a peach and banana smoothie

Lunch – a Mexican salad. Romaine, black beans, black olives, sunflower seeds, cilantro, avocado, red onion and salsa.

Thanks for the breakfast ideas! Overnight oats is probably a great way to go. Although I loved the idea of making a breakfast sandwich with avocado, belle pepper, onion and so on. I actually prefer savory breakfasts over sweet.

Meeting goals and gaining strength!

I had an amazing run today! I felt strong, fast and powerful!

I cannot believe I am seeing my miles below 9 minutes! I am so happy about this and it only makes me want to keep getting stronger and faster. I run a trail and has a lot of little, but steep, hills. It is doing wonders for my backside šŸ˜‰

I started off this rocking day with some tofu.

The norm – sautĆ©ed onion, red bell pepper, tofu, spices and a side of toast with avocado. Toast with avocado is sooooo much better than butter! Even fake butter!

Seattle’s weather has been pretty crappy this week and because of this I have been craving hit soup. I started pulling vegetables out of my fridge and came up with a fantastic vegetable soup!

Rick from Book Publishing Company contacted me a few weeks ago asking me if I would like to receive some books for review. Free cookbooks? YES PLEASE!

I picked 2 vegan and 2 raw cook books. Living in the Raw, Raw for Dessert, Local Bounty and Sweet Utopia. I have spent the entire evening drooling over pictures and planning out future meals. They are all wonderful books and I cannot wait to start cooking! I especially love Living in the Raw – the recipes are very simple with easy ingredients. I want to eat more raw as I feel my best when I eat this way. I really need a dehydrator, now!

I also was happy to see these magazines, too.

My weakness are magazines. I love them. I save each and every issue for YEARS! I always reference back to them from time to time and find joy in reading the material – it never seems to get old or be dated.

Dinner was another bowl of beans, rice and avocado.

Happy 20 months, J!

My son is now 20 months old! In 4 more months I will be a mom to a 2 year old! HOLY COW! Where does the time go?!

I have been reading a lot about raw diets the past few days, wanting to incorporate a more raw approach to my eating. Now that summer is here, there are a ton of fresh and local produce options. I also feel much better when I do eat raw, whole foods.

I started off with a fruity smoothie.

Lunch was a Mexican inspired salad. Not completely raw but pretty close.

I wont be able to plant it until the top plant stalk comes out of the seed. I see it starting to sprout so it will only be a matter of time!

Seattle has been under a thick gray cloud of rain and yuck. Fortunately there was a break and I took advantage by going on a run: 4.22 miles in 38:11 minutes. Finally breaking the 9 minute mile mark!

I am very excited to see my speed increasing! I am still taking it slow and listening to my body as I do not want another back injury.

Dinner was nice and light: toast with cashew spread, cucumber, celery, roasted carrots and asparagus x 3, and a side of hummus and peanut butter for dipping.

Time warp

What a day! It was a very positive and uplifting kind of day. =)
I started out with a wonderful rice and veggie wrap for breakfast.

I sautƩed yellow onion, orange and yellow bell pepper and white beans in a skillet with some EVOO, salt and garlic powder. I heated up some brown rice and stuffed it in a whole wheat wrap. I then topped it with avocado and hot sauce.

Around noon I started to feel a chocolate craving coming on. It had been a while since I made my CCB’s so I immediately started prepping for this wonderful treat.

Here is the original recipe. Today I toasted the coconut and added a small dollop of peanut butter. Mmmmm these are so good! AND healthy!

When Marc came home this afternoon from a meeting I decided to lace up and go for a run. It had been POURING all morning long, but luckily the clouds broke and the sun came out. I had a great run!

I was in such a positive mood when I arrived back at home. It’s amazing how exercise helps your entire well being.
I showered, then we went grocery shopping. We were both starving so we stopped and ate terriyaki before entering the store. As you can see, I never ate lunch before my run at 2:30. Only my protein packed breakfast and healthy CCB’s. It was 4:30 before I ate!
Tip: BAD idea to shop when you are hungry! I have made that mistake too many times!
I ordered Tofu Terriyaki with brown rice.

I was only able to eat half, so I packed up the rest to take home. Leftovers, YESSSS!
I settled for something light for dinner: half of an orange and a bowl of shredded wheat, topped with strawberries and almond milk

DSC05320 It has taken almost a month before anything happened, aka the root. But look at what I spotted today!

Every day I have been impatiently checking on the status of my little seed and there has been no progress. I almost threw it out a few weeks ago but then I read it could take up to 6 weeks before a root forms. I have been babying it, changing its water, talking to it, giving it sun… it looks like all of my work paid off!

It is rather ugly now, though. (sorry seed!) I still love you!

Note: for all of those that have been thinking of growing an avocado plant, it takes time! But once it starts to grow it is pretty darn amazing!

I was having ā€œone of those daysā€ today. I haven’t been out of the house in a few days and I was feeling very anxious, annoyed and going a bit nuts. J has been extremely clingy and whiny, lately.
J, I love you, I will always love you, but sometimes you drive me nuts!

Marc arrived home at about 3:30 and I happily put my running clothes on and took off for some much needed exercise. After a great 5.5 mile run, I came home refreshed, relaxed and in a much better mood!

Running, rather exercising in general, is such a release for me. It clears my mind, makes me feel calm and grounds me.

What is your de-stressor?

After I iced my knees, changed, and read some books with Jordan, it was about 6:45. I was pretty hungry, so I grabbed my cooked brown rice and made a very tasty rice dish.

 1 1/2 cups of cooked brown rice 
1/2 cup beans, I used garbanzo beans
1 tablespoon olive oil
1/2 teaspoon garlic powder
2 teaspoons dried basil
salt and pepper to taste
top with avocado

Mix all of the ingredients, minus the avocado, together in a bowl. Heat until it’s nice and hot. Top with cool, creamy avocado chunks. Your mouth will thank me later!

Gathering my Strength!

Look what I was able to do yesterday!

While this time is not breaking news, nor has it been my best, it’s my best in a very long time! And you were all right when you said to keep my chin up with my running… My legs are strong and my lungs are expanding. WOOHOO!
I will never take granted that I am able to run, ever. When you go from training for a marathon to not being able to walk it really puts things in perspective and makes you realize that while you want to strive to do you best, pushing yourself past your means leads to disaster.

I was pretty hot and sweaty after my run so I made a refreshing PB & Chocolate shake.
DSC04386I used almond milk, cocoa powder, PB, flax meal and a few squirts of agave. It really hit the spot! I normally add a scoop of chocolate Amazing Meal but I am out at the moment.

I was starving when dinner came around – I made a mexican salad.

Black beans, rice, romaine, avocado, black olives, salsa, red onion and tortilla chips. I downed this salad in seconds!
Then Marc and I relaxed and watched Deadliest Catch. We’ve been watching this show ever since it was first aired on The Discover Channel – we both love it! I know it sounds a little contradicting coming for a vegetarians mouth… hmm. (shrugs) I normally do not watch TV, except the Food Network, and learning channels (TLC, Discovery, History, etc.) And most of the captains, boats and crew are from the Seattle region, too. In the summer you can drive past the docks and see the actual boats, even see the crew members, too! What is your guilty pleasure TV show?

I want to take a few minutes and answer some formspring questions:

What other fitness regimes do you incorporate into your workouts besides running?

For right now I am sticking to running, with a few days of ab, leg and arm work; but nothing substantial. I am trying to be very careful and start off slow. I do love spinning and attend a class when I can. What can I say – I love my cardio!

Do you create these recipes on your own? You should try out for the next Food Network star. They don’t have any shows that focus on clean eating, vegan, organic, might be a great niche for you šŸ˜‰

Thanks! I am actually very camera shy, but I guess if given the opportunity it would be pretty amazing that have a show! Recipes around the blog sphere is a touchy subject, or so I have seen. People use recipes, forget to give credit of the source, owners feelings get hurt and so on. My recipes have all been adapted from sources: whether that be from physical cookbooks, a combination of intuition and ingredients, Google searching, but I would have to say that I get a lot of my ideas from my fellow bloggers. I do, however, always give credit where credit is due.

What does your husband eat? do you cook for him? Does he follow your same eating lifestyle?

Kind of – sort of. He does eat meat and dairy, and will eat meat and dairy for the rest of his life. There is nothing I can say or do for him to change. I would LOVE if he would cut down his meat consumption but I know that will never happen. Since we eat so differently we rarely eat meals together. When I ate meat and dairy we always ate together and there never was an issue. Unfortunately,  we have argued about food and preparation now that I am a vegetarian, and was a pretty touchy subject when I first changed my ways. 
Even when I ate meat I was never the one that bought or cooked the meat. In fact, my husband cooked 90% of the time! That has dramatically switched, and I do more cooking for him and ALL of the cooking for myself. Raw meat really skeeves me out and I have NEVER been a fan of working or cooking with it. Plus, with his skills as being a certified chef, he knows the exact temperatures, seasonings and skills to cook meat. Me, not so much. Every day seems to be getting easier and better. He now has the understanding that this is not a temporary change for me.

Back on the pavement

How is everyone’s weekend going?

I love embroidering! I am making two towels – one is a margarita and the other is a daiquiri. Perfect for summer! I will post when I am finished.

I captured this little robin in the backyard this morning. Whoever said the early bird gets the worm was spot on!

I have been craving odd breakfast’s lately. Odd, but ever so tasty! I had a mini wheat bagel, a nice coat of my cashew cheese, red onion, baby spinach, cucumber, a bean burger and plenty of hot sauce.

After J went down for his noon nap, I hit the pavement for a nice run. I haven’t updated my blog on my running but I have ran 4 times this past week! I feel amazing! Today I did a nice slow pace and was able to run 6 miles. Here are the stats for this week:

  • Tuesday – 4 miles 39:26
  • Wednesday – 4.56 miles 46:09
  • Thursday – 2.72 miles 28:48
  • Saturday (today) – 5.96 miles 62:14

My back feels great! But my legs are definitely getting a workout – I have missed the burn! lol

I came home sweaty and hot, and was craving something cold and refreshing. Tada – a Green Monster!
