Full Day of Eating – Meal Inspo

Hello friends! I hope you are doing well on this chilly Thursday. Here in Washington, it is a crisp 40 degrees at 7AM. I am currently all cozy in my sweatshirt, slippers and my hot cup of coffee nearby.

I thought it would be fun to do a Full Day of Eating post for you! I am currently eating intuitively and just enjoying food! I will be transitioning to a whole food, plant based diet in the coming month(s) and I will be chatting more about this decision soon. But for now, no dietary restrictions and all intuitive based meals.

Let’s start with breakfast!

Green Smoothie Bowl – I blended frozen mango and strawberries, a handful of fresh spinach, almond milk+water, protein powder, a spoonful of frozen OJ concentrate, then placed in a bowl and topped it with granola and a little drizzle of honey.

I have also been really enjoying Silk oat milk coffee creamer. I typically drink my coffee black but I do enjoy a creamy sweet coffee a few times a week. I picked this up at Kroger the other day. Jordan, my son, also enjoys coffee and likes to really sweeten his coffee and he very much enjoys this.

I was craving a sandwich when lunch time came around.

A typical turkey sandwich on wheat bread with hummus, sprouts, tomato, dried basil/salt/pepper and turkey slices. I always forget how much I enjoy sandwiches as they are not a typical lunch for me. But I very much enjoyed this!

A mid afternoon snack was an apple sprinkled with cinnamon and a string cheese.

After work, I relaxed a bit with an espresso and my book. I have gotten back into reading lately and I really enjoy relaxing with a coffee or a tea and a book! I am a thriller book reader for the most part but I wanted to read the Throne of Glass series this year. I started ACOTAR but set it aside to start TOG instead.

I made chicken burgers for dinner. I took ground chicken and combined it with salt, pepper, garlic, and Italian seasonings, and pan seared them with a bit of EVOO in a skillet. I placed it on a toasted whole wheat English muffin was was topped with romaine, Chick-Fil-A sauce and pickles. I air-fried some sweet potatoes for a side.

And that concludes a full day of eating for me! Again, my eating is very intuitive right now. I had been heavily focused on counting macros with a very high protein goal last year, but this year I am focusing more on overall healthy eating habits and enjoying food again. And like I mentioned above, I will be transitioning to a whole food plant based diet soon for very specific health goals and life satisfaction. More to come on that in an upcoming post.
