My fingers were busy today!
I am on a mission but it is taking me longer than I thought. Oh well – so this is how I spent most of my morning. In front of the window, drinking coffee and typing away. It was a beautiful morning and ended up being a lovely day. I can’t tell you how much I love sunny fall days here in the Pacific Northwest!
I guess it was all that finger exercising and I soon became hungry. A Green Monster it was!
It was MUCH BETTER with a fresh peach!
- almond milk
- almond butter
- spinach
- a half of a fresh peach
- 5 frozen strawberries
- a handful of frozen blueberries
- and a scoop of amazing grass
I bought an entire case of frozen peaches about a month ago and froze most of them. I have a half of one left and I am very happy to buy fresh ones once again. I love fall and the end of summer but I miss my fresh fruit during the winter months.
I thought lunch was going to be on-the-go:
We were going to run to see Marc’s grandparents so I quickly made a salad in some tupperware.
- Organic spring mix and romain
- heirloom tomatoe
- avocado
- quinoa
- feta
- chicken
- s & p
- basil
- a drizzle of raspberry vinaigrette and EVOO
Shake, shake, shake – it was a very tasty and convenient! Well we ended up not traveling anywhere but I still had a great lunch. π
As you can see, I eat a lot of salads. I adore salads! My middle name should be Salad! Just kidding. π
I love salads because the possibilities are endless! Lettuce is my canvas and I am the painter. I enjoy creating new creations with different veggies, fruit, grains and mixing them into one giant bowl of goodness! I have always had a love for salads but my toppings were never as healthy as they are now. Loaded with cheese, meats, heavy salad dressings (RANCH!) and just regular ice burg lettuce – I think I have graduated from those days.
What is your favorite salad or salad ingredient?
I had an early dinner tonight. I planned on going to the gym after Baby J went down at 7 so I had a fun and light dinner. Half of a Honey crisp apple, almond butter, vanilla Chobani yogurt, a few peach slices and granola – yum!
I can really feel my leg endurance improve as I am running longer and at a higher speed now. Tonight I ran between 10 and 11 minute miles for 45 minutes. Not completely straight but pretty close! It really is a mind game – I just have to tell myself I can do it!

I haven’t seen this movie in years and I am suddenly glued to the tv screen! ha It reminds me of being in middle school. I thought Christina Ricci was soooo pretty – well she still is but I totally wanted to be her after I saw this movie! π

I love salads…but it's a total summer thing…I love avo and corn off the cobb (raw) and every thing else on the planet (or what I have in the fridge)so when it cools down, I trade my salads for home made veggie soups!so now I am a soup girl!I LOVED Casper too!

Hehe, your green monster is not green!Fave salad ingredient – no idea. I love adding fruit (apples!), and I like to do warm salads where I stir fry veggies and dump them over lettuce. Steamed kabocha and parm are probably my top two ingredients though.
