Today was my last day of work. It was bitter sweet as I enjoyed my co workers but I was becoming very stressed due to me working from home and taking care of Baby J. Fortunately I am lucky enough that I can have this choice.
I cleaned out my cube today, said a few goodbye’s and off I went. Freedom! Baby J and I stopped at the library again, a different, bigger and better one, and checked out some more vegan and raw recipe books and nutrition books. My next goal after we settle down from moving is to start earning my nutrition certification. While I have always had dreams of becoming an RD, I’m not quite sure I want to be in the hospital setting any longer. I have always loved to educate individuals on healthy eating while making it delicious and do able! The obesity rate in this country is out of control and it is only going to get worse. I want to help this number and make people aware and conscious of what they are putting in their mouth and body.
Breakfast:
2 pieces of Ezekiel bread with almond butter, strawberries and a nectarine
- romaine and baby spinach
- avocado
- chopped yellow bell pepper
- chopped celery
- chopped walla walla onion
- radishes
- carrot slices
- a dollop of salsa and hummus for dipping/dressing
- raw sunflower seeds
- finely chopped parsley and cilantro leaves
- a few black bean tortilla chips
Another wonderful salad that had me very full!
Dinner:
Quinoa (keen-wah) with a little salsa and cilantro paired with a few black bean tortilla chips
