Over the years, my eating habits have evolved a lot. I’ve moved away from labeling how I eat and instead focus on what truly makes me feel my best. While I still include some meat here and there, I’ve found that I really thrive when I’m eating mostly plants. After dealing with some ongoing digestion issues and IBS-like symptoms, I’ve been on a journey to figure out what works for my body. Lately, that’s meant returning to my roots with a lighter, plant-based approach—and honestly, it’s been feeling really good.
I thought it would be fun to do a food diary blog post. Just like the good ole days!

I started my morning with coffee. Coffee first, adulting second.

Mid morning I started to feel a bit hungry and made myself a delicious smoothie. This was packed with frozen fruit, chia seeds, a splash of frozen OJ and Vega protein powder.

If there is one thing that has not changed, it’s my love of smoothies. I was a bit cold while drinking it so I paired it with a mug of chai tea with some milk.



Lunch was a massive rainbow salad bursting with color and crunch! It was loaded with chopped bell peppers, cucumbers, edamame, shredded carrots, tomatoes, red onion, celery, and a handful of walnuts—all piled high on a bed of fresh parsley and chopped spring mix. For the dressing, I kept it simple and creamy by thinning out some hummus with a splash of water. So fresh, so satisfying!

I always need a little something sweet after my meals—it’s just who I am! Luckily, I had some date nut balls I whipped up a few days ago, so I grabbed two and paired them with another mug of tea. The perfect little bite to satisfy any sweet tooth! I followed my own recipe but made a few tweaks of my own (as usual), and they turned out so good.

I went to Trader Joe’s for a few grocery items and I snacked on some sugar snap peas on the way home.

Dinner was lentil soup with ground bison. I will make a standalone recipe for this but I essentially used this lentil recipe, added ground bison and some different seasonings. It was soooo tasty and hearty! This was the first time I made lentil soup with some extra protein. Recipe coming soon!

I just want to reemphasize that my way of eating doesn’t come with a label—it’s simply focused on variety, nourishment, and feeling good in my body. Some days that means lots of veggies and fruit, other days it might include something heartier or even more processed. What matters most is that it’s balanced, satisfying, and enjoyable. I encourage everyone to find what works for you—eat foods that fuel you, make you feel good, and most importantly, bring you joy.
