11/2/2020 {Food Journal} Full Day of Clean Eating

Hello friends!

I thought it would be fun to document a full day of eating!

I always start the day off with black coffee and water.

I wasn’t too hungry for breakfast so I had two scrambled eggs with spinach and a whole wheat english muffin. I topped the eggs with Franks hot sauce – my favorite!

Lunch was a salad with chopped cabbage, green onion and cilantro, topped with nitrate free lunch meat, dried cranberries, almonds, smoked gouda, and dressed with olive oil, salt, pepper and basil flakes.

I had an orchard bar for dessert.

Dinner was a soup mix I picked up from World Market. It was their Spicy Tortilla soup mix. It was the perfect soup for a chilly fall Monday!

All I added were two whole chicken breasts, a few table spoons of tomato paste, a half can of black beans and simmered until the chicken was cooked. I took the breasts out, shredded them and added the chicken back to the soup. I cut up a few flour tortillas and put them in my air-fryer to crisp up. I served it with a dollop of sour cream, a small sprinkle of cheese and a handful of chips. It was delish!

Rest Day + Food Journal {3.29.18}

Hey friends!

This is going to be a food heavy post tonight! Today was an unscheduled rest day from running/working out. I have trained pretty hard since Sunday, and while my body feels strong and capable, mentally I needed a break.
Plus, a glass of wine sounded amazing! I don’t drink often at all… maybe a few times per month. And tonight I wanted to kick back with a nice glass (or 2!) of red wine.

Before I get into the wine, let’s start with breakfast, shall we?!

I ordered a soy + SF cinnamon dulce latte from Starbucks this morning. I normally order a black Americano but today I wanted something a bit different. Their SF cinnamon dulce syrup is on point when added with soy milk!

10 AM is when I typically eat breakfast. I have never been one to eat right when I awake. 10AM has always been the time I typically eat breakfast. Before I left for the office I scrambled egg whites with onion, spinach and red bell pepper and topped with cherry tomatoes. Once I get to work I place my container in the fridge and eat my eggs cold. I actually like them chilled!
On the side I toasted a few slices of sprouted bread and had half of an avocado.

Lunch was Pacific Foods butter nut squash (I love this one!), over some Jasmin rice and topped with a sprinkle of sea salt and black pepper. I ate it with multi grain rice crisps and Lilly’s red pepper hummus. Super simple and very good!

I stopped by the grocery store after work to pick up some dinner things… like bread, smoked Gouda and wine! 😉 A little pre-dinner snack!

As I was walking around the wine aisle, I noticed these chicken sausages in the cold case nearby. It had been quite a while since I made them and they sounded delish!

Dinner was pretty simple but very good! Chicken sausage, steamed sweet potato, steamed asparagus and a little more bread. I added a little fresh ground Italian seasoning to my asparagus for an added pop of flavor.

I also picked up a pint of Ben and Jerry’s Americone Dream – my favorite flavor!!! Jordan’s too! So you bet I had some dessert tonight!

Rest day was a success!  I feel nourished, happy and peaceful! Now it’s time to sleep!

Hi Friends! How was your Monday?

What a relaxing weekend! I hope each of you also had a wonderful weekend!

Yesterday I helped move all day – literally ALL DAY! – and I was SOOOO sore this morning! The best workout I have had EVER! I was sore in areas I didn’t think I could be sore in!

I was pretty tired still when I woke up… bring on the BLACK coffee!

I made some overnight Chia Pudding last night and it was a perfect way to start my day!

I also added some dark chocolate chips to it… mornings are better with chocolate!

For lunch I had a sprouted tortilla with hummus and cut up carrots, apple and celery with natural peanut butter. I love these lunches! Simple yet completely satisfying!

Before dinner, I snacked on a Chobani yogurt with raw muesli.

Dinner was amazing! It was pretty warm in Seattle yesterday so all I was craving was a huge salad.

Arugula Chicken Salad
HUGE handful of arugula / baby spinach combo
dried cranberries
crumbled goat cheese
yellow onion
chopped chicken breast, chilled
dried basil flakes, salt and pepper
splash of EVOO

  I also toaseted a few slices of sprouted bread and spread some Earth Balance on the toast.

  It was such a perfect summer dinner! I ate outside on the deck with this handsome man…

I also changed my phone screens this past weekend. Do you find you get bored of the same screen? I have been loving pastels and pinks lately! I found both of these wallpapers on pinterest – pink chevron for my home screen and a pink anchor for my lock screen. CUUUUTE!!!

A fun filled Fourth!

How was your Fourth of July?!

I started mine with a 6 mile run – it was such a wonderful way to start my day!  I actually haven’t been running much lately. My workouts have been at the gym – stairs, sprinting and weights. But I wanted to breathe the fresh air and run a bit. I was really proud of my run, too! Not really fast (I think I averaged a little over 10 minute mile) but I felt strong. I used my RunGo App on my iPhone, too.

After my run I came home and made a huge smoothie bowl – if you follow me on instagram you know I love my smoothie bowls!

I blended a half frozen banana, frozen peaches/mango/strawberries – about 1 cup, spinach, protein powder and coconut water. I topped it with some granola. Yum!

I showered, cleaned up the house and ran some errands. We had a late lunch at a local restaurant  called Scotts Bar and Grill. They have pretty decent food!

I started off with a beer and a few bites of bread – really refreshing!

I was deciding between the fish tacos (I have been on a fish taco kick lately!) or some ratatouille. I saw they had ratatouille as a side on a dinner dish and it just sounded really good!

But… I was extremely disappointed.

I got a little ramekin of sautéed onion and squash. Where’s the eggplant? And the tomatoes? Totally what I was NOT expecting. Dang it! So I shared some of my husband’s rib dinner. His dinner was really good!

After we finished our meal we were deciding whether or not we were going to go watch some fire works or buy some. It was starting to rain which was a bummer! But we decided to go and pick up a few for Jordan – he loves fire works!

Over all it was a really relaxing and fun day!

Clean Eating Sunday

Hello friends!

How was your weekend?

I want to start showcasing my daily clean eats as I receive so many requests to start sowing more of my meals. I do miss it! So it is a goal of mine that I am going to start blogging my food more to not only hold myself accountable but to also show you what my meals typically consist of!

My breakfast was black coffee from my french press and a delicious veggie egg white scramble with toasted sprouted bread.

Sautee yellow onion + red bell pepper + mushrooms + fresh spinach in a small sauté pan until soft. Add 3 egg whites + salt & pepper to taste. Cook until eggs are fluffy! Serve with sprouted bread lightly toasted. Ezekiel is my favorite sprouted bread!

After I did some computer work, I went to store to pick up a few items for the US Soccer game this afternoon – what a game! Sad that we tied at the last 4 seconds but I’m hopeful that we will continue to advance!

I kept eyeing the new POM teas so I took the opportunity to finally try it!

It was pretty good! A little sweet but good! I think the next time I will dilute it with home brewed green tea. 🙂 They have a peach flavor that I want to try so this will be a great opportunity to dilute it with tea!

I kept it light and simple for lunch today as I watched the game – Trader Joes Hummus, Terra Veggie chips, cucumber slices, carrots and a Laughing Cow garlic wedge. I was in food heaven! These are my favorite kinds of meals!

After the game, Bubs and I packed up and went to the park for a few hours. He played in the water while I worked on my new E-Book! I am really excited about this one! I will talk more about it later! 😉

We were not super hungry after returning home so I made a creamy smoothie – it really hit the spot!

I blended a frozen banana, a cup of frozen blueberries, a teaspoon or so of peanut butter and almond milk. I added just enough almond milk to blend so it was super thick and rich! And just look at that color! Beautiful!

Food Journal – Weekend Eats!

Hi friends!

How was your weekend? Ours was relaxing and productive! I was able to finish some projects around the house, clean, grocery shop and snuggle by the tree… I do love the sight of Christmas tree lights! The soft glow is so cozy!

Here are some of my eats that I had this weekend!

MMmmm I love veggie plates for lunch and dinner! I was looking through some of my old posts and I kept seeing these veggie plates pop up! I remember LOVING these so re-created one for my lunch on Saturday! I had peanut butter and white bean hummus for dip – I love dipping celery and carrots in peanut butter!

We also went out to Taco Del Mar and I ordered a bowl – I forget the actual name. I skipped the tortilla and rice and instead I had black beans, chicken, guac, lettuce, tomato, salsa, jalapenos and cilantro. I was really good and the perfect size!

I also went to Trader Joes for my weekly stock up!

Produce – organic apples, avocado, red bell pepper, bananas, red potatoes, sugar peas, green beans, brussel sprouts, lemon, onion, frozen edamame and organic kale.

Protein – sliced turkey, vegan hot dogs, chicken breast, ground turkey, tuna, beans and eggs.

Everything else – frozen mango, rice crackers, bars, cheese, yogurt, taco seasoning, banana chips, basil, bread, cereal, coffee, olive oil, tea and raisins.

PS – This tea is amazing! I have been drinking it all afternoon/evening!

Food Journal 11.5.13

Happy Tuesday! How was your day today?

This is going to be a quick food journal post! It’s rather late and I have an early day tomorrow!

Let’s get started, shall we?

Break was my usual black coffee and protein oats with trail mix! 1/3 cup quick cook oats with a scoop of protein powder and topped with trailmix. Yum! I love the texture the trail mix added! Plus, these oats held me over until lunch time!

I went to Trader Joes for lunch. I have never bought their pre-made salads and I was craving some roughage today!

I saw this kale and edamame salad and I knew I had to have it! Big pieces of kale, cranberries, tomatoes, edamame, onion and a lemon herb dressing! So good!

I also picked up a Kind Bar and some chocolate. I never did eat the Kind Bar but I did have a piece of chocolate!

I needed a coffee pick me up so I stopped by Starbucks for my usual Americano. And while in line I eat a piece of chocolate – dessert before lunch is ALWAYS a good idea!

My Starbucks trip was quite surprising today! I had just order my drink and was fourth in line. I was waiting… and waiting… and waiting and never moved an inch. I want to say it was a good 5 minutes before the line moved and another 5 minutes until I picked up my coffee. I try to not feel too impatient or annoyed as I have worked in both retail and fast food and I understand things happen… so I smiled at the barista who handed me my drink and he began to tell me that the drink was on them today! Surprised, I asked WHY? He told me because I had to wait so long and they were very sorry!

I always receive pretty good service at Starbucks but this really took me by surprise! I THANKED HIM and gave him the money I was going to use for my drink and told him to put it in the tip jar!

After I sat back down at my desk I found the email for corporate Starbucks and wrote them, explained my situation, experience and how amazed I was! Customer service really goes a long way! Thank you Starbucks!

However, my day ended pretty stressful and busy… and when I ready to eat dinner I was craving was CARBS! Carbs are my go to comfort food!

White wine, bread and white bean hummus… only had a few sips of wine and a few bites of bread. Even though I wanted it, they didn’t sit too well with my tummy.

Hubs wanted veggies for dinner when he got home and I was still craving carbs. Cereal for the win! Just some random granola and spelt flakes thrown into a bowl with almond milk and a few chocolate chips. I love cereal but hardly eat it!

Before bed I snuggled with Bubs – I could stare at him all night long!

And speaking of babies, I have been having MAJOY BABY FEVER the past month or so! I saw this adorable onesie and saved the link… just in case! 😉

Lunch was heated chili with a small side of organic corn chips. I love chili leftovers – chili always taste so much the day after! And the day after that!

Yesterday I mentioned that hubs was not feeling well… today I started to feel under the weather, too. A fruit smoothie with protein was all I was craving for dinner. This pink beauty had blueberries, mango, water, OJ and protein powder.

This mama is ready for bed! Good night!

I am ALWAYS being asked what I eat in a day – I should do these food journal posts more often! 😉

Breakfast

Black Coffee + Overnight Oats

My overnight oats my be ugly but they sure were tasty!

I measured 1/3 cup of quick cook steel cut oats, 1/2 cup unsweetened almond milk, 1 scoop of vanilla protein powder (half a serving) and a sprinkle of cinnamon. I mixed it all up and placed it in the fridge over night. This morning I stirred it together and added a splash more almond milk.

If I don’t add protein powder, I will add a teaspoon of nut butter and a splash of honey or maple syrup.

Lunch

Raw Kale Salad! I LOVE raw kale salads!

I use my original Raw Kale Salad recipe but I will change it up every time! This time I added cayenne pepper, red onion, cherry tomatoes and dried cranberries. Yum!!! Can you believe this was an entire bag of Organic Tuscan Kale from Trader Joes? I almost ate this entire salad for lunch! This is a good reminder for those that are going to make a raw kale salad – the kale shrinks down!

Early Dinner

I was pretty hungry before dinner (5:00) so I started noshing on my quinoa veggie patties I made a few night back. I topped them with some edamame hummus (YUM!).

I ended up eat two while I cooked some turkey patties and rice and I became full! Woops! So I gave Jordan his portion of dinner and saved the rest for tomorrow!

Now I am settling in on the couch with a hot cup of coffee and watching the Seahawks game with Jordan! 🙂
