{Recipe} The Viral Green Goddess Salad

Do you remember back in December of 2021, there was this Green Goddess Salad that went viral all over TikTok? I would literally see this salad all over my feed and not once did I feel inclined to make it.

Until this weekend.

Here she is in all her green glory… with my spin on it!

I made this salad twice: once the original way and once my way. You can find the original recipe here.

I didn’t love the original version because the vinegar in the dressing. I want to love vinegar, but I just can’t. And I was hesitant to put rice wine vinegar in the dressing, but I trusted the process and proceeded. It wasn’t horrible but it wasn’t enjoyable. I was even very careful and put the smallest amount it.

So, I created another dressing that was heavy on cilantro and no vinegar, and this one came out fantastic! The original recipe is loved by thousands and if you have no issues with vinegar, I am sure you will love it! But here is a another option for a green dressing that has a different flavor profile:

Green Goddess Dressing
Handful of fresh chives
Large handful of fresh cilantro
1 small avocado or 1/2 large
1 half shallot
2 cloves garlic
large handful of fresh spinach
1/4 cup raw cashews
1/3 cup nutritional yeast
1 lemon, juiced
Salt and Pepper to taste
Water for desired consistency
Red chili flakes for heat, if desired
Blend all together, adding water as you go. This dressing will thicken in the refrigerator so keep that in mind. Store in a glass jar for up to a week.

The actual salad consists of green cabbage, green onion and cucumber all finely chopped together. I added raw zucchini to my mixture and topped it with broccoli sprouts, fresh grated parmesan, and shelled edamame and turkey for some protein. This salad is so simple and so satisfying. Serve with pita chips, tortilla chips or place it in a wrap. Or simply eat it by itself! You can find the full recipe below.


Green Goddess Salad

Salad – Serves 2-4
1/2 head of green cabbage, chopped finely
1/2 English cucumber, chopped
1/2 zucchini, chopped
2-3 stalks green onion/scallion, chopped finely
Place all salad ingredients in a large mixing bowl
Pour enough dressing to coat the salad when you toss it.
Feel free customize your green dressing to your liking. There are plenty of versions on Pinterest!
You can also top your salad with any extra ingredients of your choice – croutons, proteins, beans, cheese, etc.
This is the perfect salad for a picnic since it can serve a lot of people, and it is incredibly refreshing.
