In the hustle and bustle of modern life, we often find ourselves swept up in the rush of daily routines and responsibilities. Amidst this chaos, it’s crucial to find moments of solace and joy, to carve out spaces where we can truly relax and indulge in simple pleasures. One such pleasure, often overlooked in its simplicity yet profound in its ability to bring joy, is the art of baking.

Baking isn’t merely about creating delicious treats; it’s a therapeutic journey that engages all the senses, allowing us to slow down, be present in the moment, and savor the experience. There’s something undeniably magical about the process of transforming basic ingredients—flour, sugar, butter, and eggs—into something extraordinary.
This Vegan Apple Cake isn’t too sweet and can be served during brunch, an afternoon snack with tea or the perfect ending to a nightly meal with friends. This cake stays moist from the pieces of apple within the cake and the slight aroma of cinnamon make this subtly warm and comforting.

Vegan Apple Cake

Serves 6-9 depending on size of piece
Ingredients
Dry Ingredients
– 2 cups unbleached all purpose flour
– 1/2 cup raw sugar
– 1 tablespoon baking powder
– 1 teaspoon baking soda
– 1 tablespoon cinnamon
– pinch of salt
Wet Ingredients
– 1/3 cup vegetable oil
– 1 cup plant milk
– 1 tablespoon vanilla extract
– 2 apples
– 2 tablespoons brown sugar
Preheat oven to 360 degrees F.
Combine oil, milk, extract and sugar into a large mixing bowl. Wisk until sugar is dissolved.
Sift flour, baking powder/soda, cinnamon and salt in with the wet ingredients. Stir until combined, but avoid over mixing. Peel your apples. Chop 1/2 of an apple into small pieces and fold into the batter.
Take the remaining apple and slice into thin pieces for the topping of the cake and set aside.
Take a baking pan of choice {I used an 8×8 ceramic baking dish} and lightly oil the bottom and sides. Add the batter and spread evenly. Arrange the apple pieces to the top of your cake however you would like. They can overlap, you can make a pattern… whatever your heart desires! Once the apples have been arranged, sprinkle brown sugar on the top the apples.
Bake for an hour at 360 degrees. Let cool and enjoy with coffee or tea.
