{Recipe} Power Date Balls – Raw, Gluten Free

I have been making date balls for years now. I just love them! I started making them when I had my first LaraBar – I loved the idea of dates and nuts all mixed together. It is a food marriage that is a match made in heaven!

I normally add chocolate and coconut… because anything with chocolate and coconut is a winner in my book! For this batch I simply combined medjool dates, almonds, coconut flakes and cocoa nibs. Simple perfection.

Ingredients

  • 1 cup raw almonds, or toasted
  • 1 1/12 cup pitted medjool dates
  • 3/4 cup raw, unsweetened coconut – or toasted
  • 1/4 cup cocoa nibs or dark chocolate chunks

Directions
In a food processor using the “S” blade, pulse the dates until they are medium sized chunks ( about 30 seconds ). Add almonds and pulse until a paste ( about 1 minute ). Add coconut and chocolate. Pulse until combined ( about 30 seconds ). You will have to scrape the sides of the food processor down as the date will become a paste and will not want to blend. I like larger chunks of almonds and coconut in my date balls so I wont over process.

Once the dough is the consistency of your liking, roll into balls. It is much easier if you wet your fingers before doing this. Place in a container and store in the fridge/freezer. I will have a few as dessert or crumble up over yogurt or as an afternoon snack.

Banana Date Smoothie

Sometimes the best things are the simplest things!

Take the banana date smoothie for example.

Bananas. Dates. Water.

Simple yet soooo amazing!

I make this as a breakfast smoothie or a lunch smoothie. I have been eating more high carb raw foods and this smoothie gives me a TON of energy that lasts!

Banana Date Smoothie

  • 3 frozen or room temp bananas
  • 4 pitted dates
  • 3-4 cups water or coconut water

Add the liquid and dates. Blend for a minute or so, or until the dates are blended. Now add your bananas and blend some more. Serve right away and enjoy your delicious drink!

Watermelon Cooler

There is nothing more refreshing than ice cold watermelon on a hot day. It is the number one food I turn to when it starts to get warm out. Today I took my watermelon love to the next level by making a beautiful jar of red watermelon juice!

No need to bust out your juicer, I made this juice in my blender!

I blended 6 cups of cold watermelon and a handful of frozen strawberries. It’s sweet and refreshing! No need to add any liquid – the watermelon has enough liquid to blend!

Here are some great facts about watermelon and why you should be consuming it on a daily basis!

AMAZING Watermelon Juice

As soon as I tasted this wonderfully, AMAZING juice I knew I had to share this!

It is SO SO easy yet so satisfying!

1/3 of a LARGE seedless watermelon, or a blender full (you can make as little or as much juice as you want)
10 frozen strawberries

Blend Blend Blend! Blend your watermelon first. Since watermelon is mostly water you don’t have to add any liquid. After your watermelon is liquid, add your strawberries and blend again.

This juice is SUPER sweet and refreshing!

You can also add frozen mango chunks for a creamy texture.

Try it for breakfast and feel energy ALL day long!

Raw Summer Salads

As the hot summer sun shines down on me, I crave and eat more raw food than any other time of the year. As my passion for clean eating deepens, it only makes sense to eat most, if not all, of my meals in its most natural state: RAW.

When I coach clients to start incorporating a clean eating lifestyle, I promote eating a diet that is 80% raw food. The most commonly asked question is: How do I eat that much raw? Individuals are afraid that they will become bored and not feel satisfied by eating so much raw food. However, once people start eating a diet high in raw food, they are even more satisfied than before, and they have a greater appreciation for food in its most natural state.

Here are some wonderful salads that you can not only eat in the summer, but these salads are great to serve all year long! They are full of variety, color and nutrients, and they will have your taste buds jumping for joy!

What is more convenient than raw food?

I love eating raw food. Fruit, vegetables, nuts… and I know that my body feels amazing when I eat raw food. When I went vegetarian several years ago, it was a goal of mine to eat a vegan diet. Then it was a goal of mine to eat all raw. While I had great intentions to eat all raw, converting to an all raw diet was very intimidating, and I felt I wasn’t disciplined enough. I know that was a big fat excuse because anyone is capable of achieving their goals if they put in the effort. I was comfortable with eating a high raw – plant based diet and still eating cooked foods every once in a while.

This brings me to the point I want to make: convenience. So many clients come to me and state that eating clean is not convenient. Sure it might take a bit more prep work but in the short end it is worth it. You will start to lose weight, feel amazing, have sustained energy and glow from the inside out IMMEDIATELY! When you eat whole foods, there is always prep time involved. Washing, cutting, cooking, storing… but isn’t your health worth the extra time and effort? YES IT IS! And if you are still thinking you don’t have time to prep your foods then maybe you should start doing some self examination. Figure out why you are not treating yourself better or think you are worthy of living a healthy, positive life. Need some help? Just ask me! πŸ˜‰ It is what I do!

So when you think you don’t have time to eat clean, what is easier than picking up a piece of fruit like an apple, orange, banana or peach and eating it? Nothing! And yes, you can easily make a meal out of several pieces of fruit. If you are still new to clean eating this might not sound extremely appealing but I want you to start thinking outside of the processed food trap and understand that YOU are the one that is creating excuses to not eat healthier and live a healthier lifestyle. This might be harsh to some but you all know that I am transparent when it comes to eating clean. It’s not as hard or inconvenient as you might think!

{recipe} Raw Cucumber Salsa

Chips and salsa – a match made in heaven. I prefer my salsa to always be chunky and fresh with LOTS of cilantro, jalapeno and lime.
For this salsa, or salad, I mixed crisp cucumbers, spicy jalapenos, chopped cilantro, scallions, lime juice and some salt and pepper to taste.

I prefer to make smaller batches of salsa so that it can be enjoyed fresh, preferably within 24 hours or so. I also like to make salsa a head of time so that it has a chance to rest and let all of the flavors combine and merry. Add an ice cold Corona or Dos Equis and your mouth will be pretty merry, too!

Raw Cucumber Salsa
2 cucumbers, peels and sliced into 1 inch chunks
1 jalapeno, minced without the seeds (keep the seeds if you like it hot!)
1 scallion, chopped
1/4 cup finely chopped cilantro (or more! I used at least a half of a cup worth)
1 lime, juiced
salt and pepper to taste
Combine all of the ingredients and toss. Serve immediately or stick it in the fridge for a few hours.
It can be eaten as a salsa or a salad. Serve with chips or have as a garnish with your favorite Mexican inspired dish.
You can add red onion if you want to add a little more color – either way it will be delicious!
