Lunch was heated chili with a small side of organic corn chips. I love chili leftovers – chili always taste so much the day after! And the day after that!

Yesterday I mentioned that hubs was not feeling well… today I started to feel under the weather, too. A fruit smoothie with protein was all I was craving for dinner. This pink beauty had blueberries, mango, water, OJ and protein powder.

This mama is ready for bed! Good night!

Reaching in

Good morning!
Here I am. Blogging at 5:30 in the morning. Wow. A sight that NEVER is seen! I ended up falling asleep on the couch last night and never woke up to go to bed until 5:00 this morning, TV still on. I sat up and saw that it was light out and immediately I was awake. I know I am going to be one tired mama this afternoon.
Here are some oats that I just HAD to share with you!

  • 1 serving of oats
  • 1 small banana cut into pieces
  • 1 tablespoon flax meal
  • 1 teaspoon cinnamon
  • 1 tablespoon almond or peanut butter
  • 1 tablespoon jam of your choice, I used strawberry

Cook oats to your liking; then add all of the ingredients on top of the hot oats! Easy peasy!

Now if Seattle could only start to see some sun the rest of my strawberries would ripen! It has been non-stop raining the past 10 days or so. I’ve been lucky to get in my runs in between clouds but it really puts a damper on the entire day.
I did a 4 mile run yesterday – it wasn’t my best run by any means. I had zero energy and ended up walking for a few minutes. BUT at least I got out there and did some miles. I had a few Mary’s Crackers with hummus for lunch then went on my run at about 3:30. Oh well – you win some, you lose some.
I showered as soon as I arrived back home, then proceeded to eat the first thing I saw in the fridge. I was starving!

Veggie Pizza? Oh yes please! This was leftover from the weekend. We ordered a few pizzas from Papa Murphy’s – mine share was a gourmet veggie with no cheese. DELISH! It had spinach, zucchini, artichoke hearts, mushrooms, tomatoes, onions and tomato sauce. I really needed basil so I had a side of my cashew spread and dobbed a little on each bite I took. Mmmmmm…

This is a great vegan option! A basic dough recipe and all veggies – it doesn’t get any better than that! My mom asked me if pizza with no cheese was good… I guess pizza with no cheese looks pretty plain and boring. And I admit, my favorite part of pizza is the cheese. But I LOVE an all veggie pizza! It tastes like heaven! But the veggies have to be quality, too. Fresh, aromatic tomato sauce, lots of herbs – all the elements make up for the loss of cheese. Plus, cheese is fatty and not heart healthy so you don’t feel weighed down after eating a slice, or three.

Question of the day: What’s your favorite poem? (And if you don’t have one, why?)
I love poetry, always have. In high school I wrote poems on a daily basis and aced my Creative Writing class. I was an emotional writer – if I was sad, I wrote. If I was happy, I wrote. If I was in love, I wrote. I would write about fruit, nature, the sky, animals; any subject or item that meant something to me.
I have been out of High School for 8 years and I have yet to write another poem. Just writing that makes me really sad. I miss it terribly. I know I should try to write again. It’s not for the lack of paper or pens, as I have a ton of these, it’s the lack of inspiration. But, you see, inspiration is all around me. I could make anything inspiration if I really tried.
My bedroom was my writing area. It was a place that was all of my own, with all of my belongings and kept just how I liked it. I felt comfortable; at peace. Even though I now live in my very own home, I do not have a place of my very own. A corner, a room, a chair. There are too many distractions, to much “us” and not enough “me”. I feel that this is a horrible excuse but it makes perfect sense to me.
I hope to write poetry again, someday.

Not that is was a bad day by any means, but it was a BLAH day. I didn’t take any pictures, ate pretty boring food and just had a boring day.

What is is, you’re asking?

Cheese – raw cheese. Made from cashews, lemon juice, garlic, black pepper, salt and water. No bueno. Actually it was disgusting. =( I think it was the lemon juice… or it could have been the garlic… or the cashews… regardless, the entire concoction went in the garbage.

Although, I am NOT giving up on raw “cheese” just yet – just this recipe! I am heading over to see if Gena has any good ones.

I am off to get my prints and finish up my Holiday cards! I always like to send them out early!

Monday blues?

Hey guys! Happy Monday! I hope everyone enjoyed their weekend!

Sorry about no post yesterday – I really just too busy and then I left my camera in the car and was too lazy to go out and retrieve it… sad huh! 😉

Yesterday was spent watching football and relaxing! For breakfast I made a lovely Green Monster!

A garden burger topped with melted brie, hummus and hot sauce, along with avocado, lettuce and raw sunflower seeds. But my favorite part was the mound of butternut squash topped with brown sugar and walnuts… I could eat butternut squash all day!

I was getting a little stir crazy so I mentioned to Marc that we should go down to grab some lattes and walk around our little shopping center that is near us.

I grabbed a soy chai tea latte and a cranberry bliss bar… let me just say that I thought I loved the cranberry bliss bars, but I was extremely disappointed! I ate one bite and threw the rest away! And that was after they forgot to give it to me and I had to run back after we had already walk about a block… oh well.

Do you STILL have Thanksgiving leftovers? WE DO! I have been having Turkey sammy’s every night for dinner… actually I love them!

I am off to the chiropractor today – I have a pinched nerve in my lower right hip and it kills! I haven’t been to the gym the past few days because I know I wouldn’t be able to deal with the pain. And I really don’t want to aggravate it any more. I hate having lower back problems…

I posted three posts yesterday but in all of them I forgot to write my eats for the day. In fact, I forgot to take pictures of my lunch! Wait, what did I even have? I know I had some carrots… oh and some cheese and crackers. Boring.

I did have an amazing breakfast!

Some more oats with maple syrup, almond butter, walnuts, pumpkin seeds and dried cranberries. Heaven in a bowl!

AND I finally went to the gym last night – it has been over 3 weeks! Yikes! After I came down with my cold, I really had no desire to workout. And it has taken this long for me to actually feel better… although I still have a stuff nose and a cough. It just keeps lingering and lingering!

When I went to donate my food items, I stopped at the store to pick up a few grocery items that we were missing – banana’s, spinach, potatoes… I have been out of spinach the past few days. Hence no Green Monsters! I missed them! So I had one after I came back from the gym. 🙂
