Meeting goals and gaining strength!

I had an amazing run today! I felt strong, fast and powerful!

I cannot believe I am seeing my miles below 9 minutes! I am so happy about this and it only makes me want to keep getting stronger and faster. I run a trail and has a lot of little, but steep, hills. It is doing wonders for my backside 😉

I started off this rocking day with some tofu.

The norm – sautéed onion, red bell pepper, tofu, spices and a side of toast with avocado. Toast with avocado is sooooo much better than butter! Even fake butter!

Seattle’s weather has been pretty crappy this week and because of this I have been craving hit soup. I started pulling vegetables out of my fridge and came up with a fantastic vegetable soup!

I will post the recipe tonight Here is the recipe – it is very fresh and lively tasting! I had a small bowl before my run. Powered by veggies!! haha

I had a snack this afternoon which consisted of a bowl of cereal.

So, what happens when you haven’t checked the mail box in… 4 days? You get a ton of pleasant surprises!

Rick from Book Publishing Company contacted me a few weeks ago asking me if I would like to receive some books for review. Free cookbooks? YES PLEASE!

I picked 2 vegan and 2 raw cook books. Living in the Raw, Raw for Dessert, Local Bounty and Sweet Utopia. I have spent the entire evening drooling over pictures and planning out future meals. They are all wonderful books and I cannot wait to start cooking! I especially love Living in the Raw – the recipes are very simple with easy ingredients. I want to eat more raw as I feel my best when I eat this way. I really need a dehydrator, now!

I also was happy to see these magazines, too.

My weakness are magazines. I love them. I save each and every issue for YEARS! I always reference back to them from time to time and find joy in reading the material – it never seems to get old or be dated.

Dinner was another bowl of beans, rice and avocado.

Yesterday I made the trip to go to the chiropractor as I have a pinched nerve in my lower back. It is about a 40 minute drive from our home so it’s not like an easy task to get there. J and I showed up and the door was locked! It was 12:45 and they close at 1 for lunch. I called my H and asked him WTF – he goes there more often than I do so I thought he may have known. I was about to cry! I haven’t been able to run because I don’t want any more damage until I can get it checked out… =(  I guess the doctor had a meeting at noon. No note on the door, NOTHING! Let me just say I was not in a good mood after that!

So I made the best of the situation and J and I went to the library. I picked up 5 or six vegetarian, vegan and raw food cook books. It wasn’t a total waste but I was still upset. So I am going BACK this afternoon at about 3 – what a waste!

I was starving when I returned back home so I made a cup of tomato soup, rosemary crackers, cambazola cheese and edamame.

Then Marc and I went shopping for groceries – we were out of all produce! I was starting to freak out a bit! lol

It wasn’t my normal place that I like to shop at. I like to shop FredMeyer, Trader Joes, Central Market and sometime Whole Foods; we ended up at Albertson’s. Their organic produce was limited and pretty much crappy, no greek yogurt (although they had organic), and I felt out of place. Oh well, I did what I had to do!

I recently participated in an ornament exchange and mine showed up yesterday! They are so cute!

After J went down for the night, I decided on some Amy’s black bean chili – always great when I am indecisive!

Marc and I snuggled on the couch the entire night, watching the football game and celebrating our Fantasy Football WIN this week! With only 5 more games left, these next week are crucial for us and our standings!

I was missing my yogurt so I had this lovely bowl of goodness for breakfast! Strawberry yogurt, granola, apple and PB!

Monday!

Happy Monday! I hope today started the week off with a bang AND I know a lot of you have short weeks this week. Score for Thanksgiving! =)

So I noticed a trend yesterday as I was going through my blog list… pancakes. Every other blogger must have had pancakes yesterday for breakfast. I was very jealous, by the way. =( Funny thing was is that Marc made pancakes for breakfast but I wanted a Green Monster.

But I made up for it today!

A yummy short stack of pancakes with a little almond butter in the middle and a side of Chobani yogurt. Hit the spot!

Pancake lovers – do you like your pancakes thin or thick?

Marc loves making his very thin but I love thick, cakey pancakes! Warm, comforting and delicious!

I ran to the gym at about noon to get in a quick run since Marc is at a meeting tonight – I am falling in love with running more and more! I never thought I could be a runner, ever. But with a little patience and will I am getting stronger and faster each time I run! BUT I am scared to run outside. =( I see more stories about people getting hit, abducted or attacked that I just cannot bring myself to do it.

I quickly made lunch when I arrived back at home. Marc was making a bagel with lox and cream cheese which look great! I was grabbing the bagels and thought “With the thick pancakes I had for breakfast, maybe I should stick with veggies”. And that’s what I did!

A nice warm mug of tomato soup with a caprese type salad: organic spring mix, mozz cheese, tomatoes, avocado, basil, EVOO and s&p.

I love caprese salads! Fresh mozz, heirloom tomatoes, aged balsamic and good olive oil – it doesn’t get any better than that!

Because it was a gloomy day, I decided to dig out my mixer and tie my apron on for a warm batch of hot, fresh cookies.

And yes, like always, I ate too much batter! lol – it’s my favorite part!
