Winter Veggie Soup {Vegan, Gluten Free Option, Paleo Option}

Brrr! It’s COLD! I miss the summer nights, wearing tank tops and flip flops, frozen smoothies and the SUN! But what I do love about the winter is that I am able to make endless pots of hot soup to warm my bones!

I made this soup last weekend and it was the perfect batch to kick off my soup making season! Full of flavor and veggies, I ate this for lunch and dinner until it was gone!

The great things about soup is that you can sub different veggies or herbs and it will alter the flavor of the soup. But in a GOOD way! Is there such a thing as a bad soup? I think not!

1/2 yellow onion, chopped
3 stalks celery, chopped into small pieces
3 carrots, chopped into small pieces
1 head of collard greens or kale, chopped into small bite size pieces
1 Japanese sweet potato, chopped into bite size pieces
2 regular size cans of unsalted chopped tomatoes with the juice
herbs of choice – I used salt, pepper, dried basil, dried thyme, sage powder
Handful of noodles (optional – omit for paleo and use GF noodles for GF) – I used spaghetti noodles that were broken in half. Only a handful as I didn’t want a lot.
4-6 cups of water or stock – I always use water in my soups and they turn out great!

In a cast iron pot or a soup pot, add a few swirls of EVOO. Once hot, add your onion, celery and carrots. Season with a pinch of salt and pepper. Stir until the veggies are soft.

Add your potato and tomatoes and seasonings. Stir and cook for a few minutes. Then add your water – add 4 cups a the beginning and save the remaining cups for later, if needed.

Turn the pot up to a boil. Once at a boil, turn back to medium-low and add your greens. Cover and simmer for 30 minutes.

Check to see if you need to add more spices, salt, pepper and/or water. Your soup should be ready to serve at this point!

If you are using noodles:

Turn the pot back up to a boil. Add your noodles. Cook until the noodles are done.

Serves 6-8

I am been craving my green smoothies! This one was super smooth and creamy. It was pretty amazing!

What a relaxing weekend! I hope each of you also had a wonderful weekend!

Yesterday I helped move all day – literally ALL DAY! – and I was SOOOO sore this morning! The best workout I have had EVER! I was sore in areas I didn’t think I could be sore in!

I was pretty tired still when I woke up… bring on the BLACK coffee!

I made some overnight Chia Pudding last night and it was a perfect way to start my day!

I also added some dark chocolate chips to it… mornings are better with chocolate!

For lunch I had a sprouted tortilla with hummus and cut up carrots, apple and celery with natural peanut butter. I love these lunches! Simple yet completely satisfying!

Before dinner, I snacked on a Chobani yogurt with raw muesli.

Dinner was amazing! It was pretty warm in Seattle yesterday so all I was craving was a huge salad.

I also changed my phone screens this past weekend. Do you find you get bored of the same screen? I have been loving pastels and pinks lately! I found both of these wallpapers on pinterest – pink chevron for my home screen and a pink anchor for my lock screen. CUUUUTE!!!

Yesterday I mentioned that hubs was not feeling well… today I started to feel under the weather, too. A fruit smoothie with protein was all I was craving for dinner. This pink beauty had blueberries, mango, water, OJ and protein powder.

Wheat Berry Salad

Several months ago… more like a year… I purchased a small container of wheat berries. Not entirely sure what I was going to do with them, I figured eventually I would come across an amazing recipe to try.

Finally, that day has come.

If you weren’t aware, wheat berries are whole and unprocessed kernels of wheat. They are higher in vitamins and essential nutrients when eaten in their whole form. Plus, they are very tasty and have great texture. Here is a great article on wheat berries.

While skimming through one of my countless recipe magazine I saw an advertisement for red wine vinegar. It had an amazing looking salad which featured wheat berries. My luck!

This cold salad has so many textures, so many different flavors… they all complement themselves very well. Do I dare say that even a bit of feta would be amazing in this? Yes. Yes it would.

Wheat berry Salad

  • 5 cups water
  • 1/2 cup dry wheat berries
  • 1/2 cup yellow or red onion, chopped
  • 1/2 cup diced cucumber
  • 1/4 cup diced red bell pepper
  • 6-8 kalamata olives, quartered
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons dried cranberries (these are the highlight of this salad!)
  • a few sprigs of fresh parsley, chopped
  • 1 tablespoon EVOO
  • Red Wine Vinegar to taste (I splashed a few drops in, tossed and tasted. I kept doing this until I was satisfied – 2 tablespoons roughly)
  • salt and pepper to taste

Combine the wheat berries, water and a pinch of salt into a sauce pan. Bring to a boil and reduce to medium/low until wheat has desired texture – about an hour or longer. Take off heat, strain and put in the fridge to cool.

Once they have cooled, combine all of the ingredients together. Salt and pepper to taste. Place back in the fridge for 30 minutes or longer. Serve.

This salad can be used as a side or eaten as a main meal.

Raw Summer Salads

As the hot summer sun shines down on me, I crave and eat more raw food than any other time of the year. As my passion for clean eating deepens, it only makes sense to eat most, if not all, of my meals in its most natural state: RAW.

When I coach clients to start incorporating a clean eating lifestyle, I promote eating a diet that is 80% raw food. The most commonly asked question is: How do I eat that much raw? Individuals are afraid that they will become bored and not feel satisfied by eating so much raw food. However, once people start eating a diet high in raw food, they are even more satisfied than before, and they have a greater appreciation for food in its most natural state.

Here are some wonderful salads that you can not only eat in the summer, but these salads are great to serve all year long! They are full of variety, color and nutrients, and they will have your taste buds jumping for joy!

HOT HOT HOT

Seattle has been HOT!

We tied with Arizona today! Crazy for this time of year!

Today was spent inside, cleaning the ENTIRE house from top to bottom! Every nook and corner was swept, vacuumed and mopped. What was once a dusty, dog hair zone is now a sparkling home once again! I have been walking around barefoot all night and it feels sooooo good! I love clean hard wood floors!

I did have some lunch at about 11:30 – I skipped breakfast. Ooops!

Have you guys heard of Better Bean? They are a Portland based company that specializes in BEANS! I first came in contact with them a year ago and then I met Meagan, one of the owners, at the Seattle Veg Fest this year. Such a sweetheart! I gave her a big hug and congratulated her on this amazing journey she is on!

Their products are fantastic! I love me some beans and no matter what you are craving, they have you covered!

I bought the Cuban Black Beans and ate them straight from the container today. I didn’t even heat them up!

And just look at the ingredient list – super simple, very clean and packed full of goood stuff!

I finally showered at 2:45! I was a hot mess after scrubbing the floors, 3 loads of laundry, vacuuming and organizing.

I also made myself a refreshing iced coffee – first iced coffee of the year!

I used my Keurig and brewed a K-Cup over ice. Then I added a splash of unsweetened almond milk and a few drops of stevia. So refreshing and good!

Jordan LOVED his first day at his new school! He was naming his new friends, sharing his play time adventures and letting me know how much he enjoyed it! I made him a simple snack of Chobani yogurt and apple slices.

The rest of the afternoon was spent outside, riding bikes and enjoying the sunshine!

Dinner was light and so good! We grilled up a piece of salmon seasoned with a little garlic power and pepper and I made a fresh spinach salad to go with it.

I sprinkled some dried basil, oregano, more black pepper and spritzed some fresh lemon juice on top of my piece. 

My salad contained spinach leaves, red onion, kalamata olives, goat cheese, a splash of olive oil and some pepper.

It was exactly what I was craving!

Before it got too dark we all took a nice walk around the block. It was such a beautiful night out! The lights were reflecting off of the lake and there was a nice, cool breeze. Perfect!

Clean Eats

I thought I would take a moment and share what I have been eating. I used to do this on a daily basis and not only did it help me becoming more aware of what I was consuming but it also helps those that need a little inspiration in their own daily eating.

Breakfast was a simple organic egg cooked in a little olive oil and an extra egg white, steamed spinach with salt and pepper, half of a small avocado, grilled sprouted toast and black coffee.

I was cleaning pretty much all morning so I didn’t end up eating breakfast until 11 or so. Christmas has been cleared out and put away until next year. I was a little sad at first but it feels a bit less cluttered now.

I ended up going t the gm around 6:30 tonight and when I got back home I heated up bowl of more chili topped with fresh cilantro. I love homemade chili. It’s been really cold here in Seattle and nothing warms my bones more than hot soup or chili. dinner1

Behind the Scenes

Happy Sunday to you! I hope everyone’s weekend was perfect!

We had beautiful weather in Seattle! Jordan and I went down to the beach and watched the ducks yesterday. It was a little chilly still but the sun was warm and very welcoming after the long, dreary winter. We just had snow last week, too! Crazy weather!

As you all know, I love soup. I usually make a huge batch of soup on the weekend and lasts me all week long. But I have been craving salads the past few weeks and my fridge has been packed with fresh produce. Don’t you just love opening your fridge and seeing fresh veggies and fruit?!

Today’s lunch – a packed salad with spring mix and veggies – cucumbers, red onion, avocado, snap peas, sun dried tomatoes, fresh basil, dried cranberries, sunflower seeds, olive oil, salt, pepper and a splash of hot sauce.

I also had a side of whole wheat tortilla, hummus and kalamata olives. I love kalamata olives – I could eat an entire jar in one sitting!

I received an email a few weeks ago asking me if I was done with blogging and if I was doing alright. She stated that she missed my blogging and hoped I was not gone.
Rest assured, I am here. In fact, I too miss blogging. A lot.
I started my blog in 2009. I didn’t know what I was doing or where it was going to take me but I found it very fun and loved to be able to share with so many other people. My blog has then turned into an online resource for clean eating, vegan recipes and a health resource. I have learned so much from my blog – the continual research, educating others and being a very active person in the food world. I am The Clean Eating Mama and will always be the Clean Eating Mama.
Between working full time, raising a little boy and regular daily activities, I find it challenging to blog like I used to. I get frustrated and wish I could but I know it is all about balance. I really do enjoy blogging and I need to make it a priority and a routine. Like brushing my teeth. So for those that continue to read my blog, thank you. From the bottom of my heart. I hope to continue to provide nutritious recipes and be a trusted resource for your food and health needs.

Can you believe he is three and a half?! He is getting so big! This is Jordan and his 2 year old cousin, Alexis, at my grandmothers 70th birthday party a few weekends ago. He is sooooo incredibly handsome! And I just love her little cheeks! Holding hands… swoon!

Fresh flowers are a MUST in my home. I always thought you needed someone to buy you flowers but realized I wanted flowers all of the time. Now I buy them along with my groceries. They add a level of calmness and peace to my home.
