Food Journal: Clean Eating Dinner

The one thing that I learned from clean eating over the past 4 years or so is that simple is ALWAYS better. Clean Eating = Simple Eating.

It’s the truth.

My goal for these food journal entries is to help you understand that dinner, lunch and even breakfast should be simple, mostly if not all plant based but definitely not boring.

Last night’s dinner was amazing. I steamed cut up sweet potato and mixed it with black beans and a cut up Field Roast sausage. I topped it with some salsa for added flavor. I also had a side of celery and hummus.

I don’t buy a lot of meat substitute items because I find that most of them are not very clean at all. Plus, when I went plant based I had no desire to eat meat nor did I crave the taste for meat. But Field Roast is far superior in the fake meat category, in my opinion.

First of all they are based out of Seattle. And I love to support my local food companies! I did a quick search and there are a ton of products that are made in Seattle – I am hoping to do a post on these companies here very soon!

field roast For a meat free product that not only tastes amazing but that is relatively clean these are a great option for those that are trying to include more plant based products in their diet. Around Thanksgiving I picked up a Field Roast Celebration Roast and it was soooo good!

But again, this is not a product I eat on a regular basis. It’s definitely a splurge type item and I buy it maybe once every few months.

I cooked to sausage over my flat top grill for a few minutes to get it nice and crunchy on the outside and hot in the middle. But you can totally eat these cold, too.

I also sipped on some sparkling water through the night. FACT: When I was pregnant I drank sparkling water everyday! This started my love affair with sparkling water and I still drink it on a daily basis. It’s a great option for those of you that are trying to get off of soda or for those that need some help getting in the daily hydration allowance.

I am off to attend the Mother’s Day event at Whole Foods! I cannot wait to see what goodies will be in my bag!

HOT HOT HOT

Seattle has been HOT!

We tied with Arizona today! Crazy for this time of year!

Today was spent inside, cleaning the ENTIRE house from top to bottom! Every nook and corner was swept, vacuumed and mopped. What was once a dusty, dog hair zone is now a sparkling home once again! I have been walking around barefoot all night and it feels sooooo good! I love clean hard wood floors!

I did have some lunch at about 11:30 – I skipped breakfast. Ooops!

Have you guys heard of Better Bean? They are a Portland based company that specializes in BEANS! I first came in contact with them a year ago and then I met Meagan, one of the owners, at the Seattle Veg Fest this year. Such a sweetheart! I gave her a big hug and congratulated her on this amazing journey she is on!

Their products are fantastic! I love me some beans and no matter what you are craving, they have you covered!

I bought the Cuban Black Beans and ate them straight from the container today. I didn’t even heat them up!

And just look at the ingredient list – super simple, very clean and packed full of goood stuff!

I finally showered at 2:45! I was a hot mess after scrubbing the floors, 3 loads of laundry, vacuuming and organizing.

I also made myself a refreshing iced coffee – first iced coffee of the year!

I used my Keurig and brewed a K-Cup over ice. Then I added a splash of unsweetened almond milk and a few drops of stevia. So refreshing and good!

Jordan LOVED his first day at his new school! He was naming his new friends, sharing his play time adventures and letting me know how much he enjoyed it! I made him a simple snack of Chobani yogurt and apple slices.

The rest of the afternoon was spent outside, riding bikes and enjoying the sunshine!

Dinner was light and so good! We grilled up a piece of salmon seasoned with a little garlic power and pepper and I made a fresh spinach salad to go with it.

I sprinkled some dried basil, oregano, more black pepper and spritzed some fresh lemon juice on top of my piece. 

My salad contained spinach leaves, red onion, kalamata olives, goat cheese, a splash of olive oil and some pepper.

It was exactly what I was craving!

Before it got too dark we all took a nice walk around the block. It was such a beautiful night out! The lights were reflecting off of the lake and there was a nice, cool breeze. Perfect!

I am…

Labeling yourself can turn into a sticky situation. With labels come high standards and consequences if you accidently, or purposely, steer off course. I see so many individuals get so caught up in the label making – I am this, I am that. But being truthful and honest about what you label yourself is the key. As well as what you believe in.

I try very hard to not label myself as a vegan or vegetarian. If people ask me about my eating styles I say “I eat vegan” because… well… I’m not perfect. 99% of the food I consume follows this basic guideline – eating plant based food. However, am I completely strict on this? No. Why? Well, because I feel there are times when rules can be bent. It’s a choice I can make as long as the situation feels comfortable.

I listen to what my body tells me. I don’t eat like a typical American eating a typical Western diet. I am perfectly fine with having a smoothie for dinner, or a huge bowl of raw veggies for lunch. It’s about satisfying your body and feeding it with the right fuel for your individual and unique way of life.

Do I crave junk food? You bet! I have a HUGE sweet tooth and if I am not careful it can start to take control over me. Junk food is highly addicting. There are many ingredients, most of them un natural ingredients, that act like drugs in our bodies. Sending these little moments of bliss to our brains. We start to crave it and develop habits and thus forms an addiction. I enjoy chocolate just like the next person but I don’t let it control me. I control it by eating a very high percentage of plants and grains. But this has taken a lot of training. It’s a habit for me to shop in the produce section and bulk food section at the market. I rarely skim the middle isles unless there is a specific item on my list. I never set foot in the meat department because I have no need for meat in my diet. I will occasionally by a carton of Organic, Free Range eggs and a few dairy items for Jordan but for the most part I buy fresh produce.

I am not joking when I say diets do not work. You need to change your eating habits for life. It takes time, effort but with some patience you will start to learn new ways and love the fact you are eating fresh, whole foods. And then cooking becomes enjoyable again! Mixing fresh ingredients and blending spices to create the perfect meal is so rewarding!

It doesn’t matter if you are a vegetarian, vegan, omnivore or carnivore… you must follow the same principles of eating healthy, eating from the Earth and eating what your body needs.

Just for fun, here are a few things I AM:

I am a coffee drinker… not going to stop and you cant make me!

{Product Love!} Orchard Bars and NuNaturals Stevia

You ALL know how much I LOVE supporting healthy food companies. Today, I have two product reviews for you!

I have been posting some pictures of Orchard Bars on my Clean Eating Mama face book page… and for good reason! These bars are simply AMAZING!

If you are not familiar with Orchard bars let me fill you in a bit. Orchard bars are made in the valley that I grew up in and out of the small town of Cashmere, WA. They are super chewy with the right amount of nuts and seeds to balance it. I think my favorite is the Pineapple Coconut & Macadamia – sooooo good!

The one pictures above is the Cherry Almond Crunch. This must have been Jordan’s favorite as he couldn’t resist any longer! He snatched one up, opened it and dove right in!

Next up is one of my all time favorite companies, NuNaturals. They are ALWAYS so generous with their product… and such amazing customer service! Since my last package, I have really grown to love stevia. So when I received a warm email from Ron – AKA The Sugar Free Papa(!!!) – I was so excited to try their new product line!

Grocery Haul!

Hey loves!

I LOVE grocery shopping! Probably one of my favorite things to do… ever! Clothes shopping? Not so much… shoe shopping? Nah. But grocery shopping… YES!!!

We were at Trader Joes and Jordan always likes to pick flowers up for me… I LOVE tulips so her picked me out a small bouquet of pink tulips. So sweet! 😉

So here is what my haul consisted of:

Let’s start with the produce!

Pretty usual and basic today! For fruit I picked up some oranges, apples, lemons and bags of frozen berries, strawberries and cherries. I prefer veggies over fruit so my fruit load is always MUCH MORE than my fruit! Carrots, celery, onions (yellow and red), avocado, cucumber, red bell pepper, greens (spinach and kale), heirloom tomatoes and cauliflower. I am upping my clean eating and raw food consumption during my 90 day challenge so I wanted to make sure I have plenty of options!

Nothing exciting going on here… some pure maple syrup, cocoa powder for my shakes, some random spices I was out of and a box of pancake mix for Jordan on the weekend… he LOVES pancakes! He is DEFINETLY my child! 😉

Almond milk (both for home and at my office), hummus, beans, Greek yogurt, quick cooking barley, vegan chocolate chip cookies (for my occasional cookie with coffee ;), dish soap and my beautiful flowers from my favorite little man!

Ok, so before anyone starts freaking out about all of the “snack” food, I do want to mention that he eats A LOT of fresh vegetables and fruit. He LOVES apples, carrots, cauliflower, cucumbers, frozen berries and spinach (in his smoothies, of course!).
He does get a “special” cereal (Panda Cereal!), real fruit yogurt, Organic Z bars, banana chips, gluten free mac and cheese, Smart Dogs (vegan, 100% protein dogs. I eat them too!), chicken noodle soup (for nights that we are busy!), vitamins, 100% fruit Crushers (they are pureed fruit, 100%), and fruit leather. This will last him all week and then some. He knows that he doesn’t get snack on a daily basis but when I buy snacks that are REAL FOOD he thinks he is getting a treat but I know they are at least healthy.

So that is it!

I feel SO MUCH better after I grocery shop! Just seeing all that wonderful produce makes my stomach rumble and my mouth water! 🙂

Be My Valentine! Shake

Being beautiful and healthy starts from the inside!

I have been LOVING my shakes and smoothies lately! I am doing a 90 day transformation challenge where I am consuming 2 shakes/smoothies a day to shed some unwanted “fluff” and to help gain muscle. My body is LOVING me right now! I also have a few family members and clients that are doing this so I wanted to share this AMAZING combo with all of you!

  • Vi Shake Mix (or the protein powder of your choice)
  • 1/2 cup of frozen cherries
  • 4-5 frozen strawberries
  • a tablespoon of frozen OJ
  • a teaspoon of nut butter
  • a splash of almond milk
  • water for consistency

Blend baby, BLEND!

And of course, serve this beautiful drink in a wine glass… it makes sipping enjoyable and romantic! 😉
