I’ll admit it: I LOVE getting questions from all of you! Here is a growing list of questions that I wanted to make public in case any one else may have the same kind of question.

Do you count calories / how many calories do you consume daily?

Oh gosh, I have no idea how many calories I eat in a day. By eating and incorporating a healthy lifestyle I don’t worry too much about how many calories are going into my body. As you may have read, I did have an un-healthy relationship with food; limiting my consumption to a very low amount, basically obsessing about ever little crumb that I digested. I became a prisoner to food and I wasn’t able to enjoy life. I do watch what I eat still, but I have learned to enjoy and embrace all of the healthy foods on this planet!

What are your staple foods? What are your must haves for the pantry and fridge?

Here is a list of my most loved items that I have in the house at all times:
5 power foods
Other foods include organic apples, almond milk, raw almonds, bananas, carrots, onions, nut butter, olive oil, maple syrup, oatmeal, organic coffee, frozen assorted fruit (if it’s not in season), flax meal, whole wheat flour – I also buy seasonal and on sale produce. It varies from week to week. Obviously I buy more in the summer than in the winter, and I try to search for organic products always.

Do you plan your meals?

Nope – I eat on a whim. I am a pretty horrible planner in general as my tastes change from one minute to the next! But if I know a vegetable needs to be eaten ASAP I will make sure to incorporate it that day. I do keep a handy portfolio of recipes and foods I want to eat or try, and branch off of that. The one thing I have noticed from blogging and reading other blogs is the inspiration I seem to get on a daily basis! There are some mighty fine cooks out there in blogger land!

I know your husband eats meat and you don’t. Do you plan on raising Jordan vegetarian or both?

Right now I am currently keeping him vegetarian 99% of the time. He may eat white meat once or twice a month but this is not planned. Meaning, I don’t make him meals with meat in it but sometimes his dad will give him bites of chicken, turkey or ham, or if he is staying with my mom I believe he eats a small amount of meat with her. I really don’t have an answer as to why I am not keeping him 100% vegetarian at the moment, but I do plan on keeping him on a very high vegetarian diet from here on out.

What are some good and wholesome snacks you recommend?

My motto – If you are hungry, EAT! Depriving yourself of food will only lead to disaster in the long run. I eat 5-6 times a day. Small, filling meals and snacks keep me fueled all day long and I never feel fatigued. I know this is no easy task as I have a little one running around all day but I keep grab-n-go snacks available at all times to help me.
Vegan and Non Vegan snacks/mini meals

  • Apple with nuts or nut butter, or a banana with nut butter
  • Carrots, celery, bell pepper and crackers with hummus
  • Lara Bars, Nectar Bars, Glo Bars and Pro Bars
  • Greek Yogurt with granola and fruit
  • a handful of crackers topped with tomato, basil and mozzarella
  • crackers with nut butter
  • A Green Monster

What kind of dog is Lilly?

Lilly is a 5 year old half German Sheppard – half Rottweiler. She is very well mannered, gentle demeanor and loves kids.

Weekend Pics + FAQ’s

Hey everyone! How was your weekend?

I have seen a lot of you were having wonderful weather and were able to get out of the house – I love that spring is finally here! =)

We were able to get out of the house as well and headed down to the park. J loves the outdoors!

We all had a great time getting some fresh air!

But before we left we made some homemade pizza – I had veggie, of course. I used Soy Cheese but was very upset that I didn’t look at the ingredients BEFORE buying as it contained casein – which is a milk protein. I would have skipped it all together!  My pizza was still good – it had artichoke hearts, sundried tomatoes, red bell pepper, onion, basil, tomato sauce and pizza seasoning (love this stuff!!). I have been taking a break from running as my legs have been pretty tired feeling. But I did lace up and try them out this morning. Marc told me to run as long as I can, no goal but to just run until I felt the need to stop. Little did I know I was able to run 8.5 miles today! I was feeling great and I am so happy I took those days off! I even upped my pace by 10-20 seconds each mile – I love seeing improvements in my stamina and strength.

Before heading out I ate half of a Clif Bar and a cup of coffee. See anything?

After my run I came home and made a refreshing GM! Much needed, too!

I went and showered and was still starving, so I made myself a HUGE sandwich. I toasted some sprouted bread and filled it with home made guac, two bean burgers, lettuce, cilantro, red bell pepper and onion.

It was to-die-for good!

The rest of the day was spent hanging out with my two boys – it was a wonderful and relaxing weekend! =)
