Excited!

Today started out with a Nectar bar and some decaf coffee.
 
For some reason I failed to snap a picture – oops.
J and I headed to the gym after he ate breakfast. Poor thing always cries when I leave. =( But he calms down right away. I try to only take him when I know Marc wont be home early enough for me to work out.
I came home and made myself a wonderfully refreshing drink!

I juiced:

  • 1 beet
  • 1 carrot
  • 1 apple
  • 4 strawberries
  • 2 handfuls of spinach

Then blended with a banana, flax meal and ice. I love this combo!

I won this delicious pumpkin butter from Chelsea’s blog!
J was pretty happy about it too!

He couldn’t wait to try it, apparently! 😉
At at 3:30 I was feeling a little hungry so I toasted up some bread, spread some cream cheese and pumpkin butter on and ate. YUMMM!!!

Speaking of great treats – dinner was anything less than spectacular!
After reviewing my eats today I noticed that it was severely lacking in the vegetable department.
I think this will do the trick!

I steamed some carrots, Brussels sprouts, green bell pepper and celery.

Stir fried some tofu in soy sauce, sesame oil and sri racha.

Boiled some edamame.

I added some terriyaki, ginger, chili flakes and MORE sri racha.

I boiled some whole wheat organic noodles, too.
VERY YUM!
Well Marc is on his way home and I have dishes to wash. Have a wonderful evening!

  1. I commented on your "change vs. being comfortable" post with a similar experience. I was definitely one of those people who just mentally ready to commit to college but I really enjoy it now. There's something about being a little older that makes you really appreciate the experience of learning. Good luck!

  2. You are VERY welcome!I think that some people just aren't ready for "higher education" right out of high school. If I knew what I knew now, my degree would be COMPLETELY different. Oh well, such is life 🙂

  4. I can't even find the words to tell you how amazing you are for taking on this educational challenge. I'm 24 myself, and will be going back to school next fall (I'm basically starting in undergrad as well.) The fact that you're a dedicated Mom taking this journey to enhance both your life as well as your family's, really impresses me! It is never too late to begin anew! Good luck!Also, that beet juice looks delicious and refreshing!

It is something I have been thinking about for months and now that I am pregnant i'm hoping to make the 'big change' during maternity leave! Thanks for the boost in confidence that it is possible!
